Cilantro Lime Cauliflower Rice

Cilantro Lime Cauliflower Rice is a vibrant and zesty dish that offers a healthy twist on traditional rice. It’s made by pulsing cauliflower florets into rice-like grains, then sautéing them with shallots, fresh cilantro, lime zest, and a generous squeeze of lime juice.

Preparing the Cilantro Lime Cauliflower Rice

  1. First, if using frozen cauliflower rice, warm it in the microwave for 3 minutes, or until almost thawed.
    • Note: You can skip this step if you prepare your cauliflower rice by pulsing cauliflower florets.
  2. Next, place a tablespoon of unsalted butter into a nonstick skillet, and melt over medium heat.
  3. Then, add the thawed or freshly pulsed cauliflower rice and stir to combine.
  4. Next, add the shallots, habanero salt, chicken bone broth, lime zest, half of the cilantro, and coarse black pepper. Stir to combine.
  5. Then, turn the heat to medium-high.
    • Note: The higher heat helps extract the moisture from the cauliflower rice, so it’s not mushy.
  6. Next, cook the rice for about 5 minutes.
  7. Then, turn the heat off and add in the lime juice.
  8. Finally, add the remaining cilantro, stir to combine, and serve immediately!
