Finally, this cake is the perfect dessert to share at any Spring luncheon or gathering with friends and family.

Honey Pistachio Cake is allergy-friendly and made using Sourdough Starter Discard, unsweetened applesauce, coconut sugar, and raw honey.

Sourdough Starter Discard is incorporated into the batter which helps reduce the gluten content. Although this cake batter does not require any time to rise, you can allow the batter to sit and ferment to break down the gluten content within the cake even more.

Furthermore, this recipe substitutes eggs for Unsweetened Applesauce. Unsweetened Applesauce has a similar consistency to eggs which makes it an easy substitution.

In addition, Coconut Sugar in lieu of Brown Sugar. For those who may be unfamiliar with the health benefits of Coconut Sugar, it contains healthy fats that prevent high cholesterol and heart disease. This sugar also has a lower glycemic index to help balance your blood sugar.

The Sweet Honey Glaze Ingredients

Crafting the Glaze

  1. First, in a microwave-safe bowl, combine the honey, butter, and brown or coconut sugar.
  2. Next, heat the ingredients for about 45-60 seconds; stir to combine.
  3. Then, in a small bowl, combine the Pistachios and Cinnamon.
  4. Next, cover the Honey Pistachio Cake with the Honey Sauce and sprinkle it with the spiced Pistachios.

Preparing the Oven and Loaf Pan

  1. First, preheat the oven to 325 degrees Fahrenheit.
  2. Next, spray a loaf pan with nonstick baking spray.
  3. Finally, line the bottom with parchment paper with paper hanging over the edges like a handle. This will help remove the cake once it’s baked.

Creating the Cake Batter

  1. First, in a Bosch Universal Mixer, combine all of the ingredients.
  2. Next, turn the mixer on to speed 3 and mix until just combined.
  3. Then, turn off the mixer.
  4. Finally, pour the batter into the prepared loaf pan (you could also bake this cake in a Bundt or cake pan if you prefer).

  • 3/4 c. Coconut Sugar
  • 1/2 c. Unsweetened Applesauce
  • 1 1/2 c. King Arthur Baking Company Cake Flour
  • 1 tsp. Baking Soda
  • 1 tsp. Pink Salt
  • 1/4 c. Raw Honey
  • 1 tsp. Mexican Vanilla
