Make the Crawfish and Rice Stuffing
Make the Rice
- First, in an All-Clad Nonstick Pot, bring the Beef or Chicken Broth (or water) to a boil.
- Next, add one cup of rice and stir into the liquid.
- Then, pop a lid onto the rice and reduce the heat to simmer.
- Next, cook the rice for 15-20 minutes.
- Finally, fluff the rice once it finishes cooking, and then turn the heat off.
Bring Liquid to a Boil and Add Rice

Stir to Combine and Then Reduce to a Simmer

Make the Crawfish Stuffing
- First, in an All-Clad Nonstick Pan, melt 4 tbsp. of Unsalted Butter over medium heat.
- Next, add the diced onion and bell pepper and cook until translucent (about 3-5 minutes). Season with salt and pepper.
- Then, add the minced garlic and cook until fragrant (about 1 minute).
- Next, add the Crawfish tail meat and stir to combine them with the other ingredients.
- Then, add the Cajun Seasoning and stir to combine.
- Next, add the Heavy Cream (or Coconut Milk) and cook for about 1 minute. Turn off the heat.
- Finally, pour the Crawfish mixture into the cooked rice and stir to combine. If you’d like to add more Cajun seasoning, do so now.

- First, preheat the oven to 400 degrees Fahrenheit.
- Next, in a Ziploc bag, place a chicken breast inside.
- Then, using a meat mallet, pound the chicken breast into a thin, even layer.
- Next, season both sides of the chicken breast with salt and pepper.
- Then, take 1/4 c. of the Crawfish stuffing and spread it across the chicken breast.
- Next, take one end of the chicken breast and begin to roll it tightly (almost like you’re rolling dough for a Sourdough Cinnamon Roll).
- Then, place two to three pre-soaked toothpicks into the chicken to hold it together. (Note: if you do not presoak your toothpicks, you run the risk of them catching fire in the oven).
- Finally, place the Cajun-Stuffed Chicken Breasts into a baking pan and drizzle with Olive Oil.
