Sourdough Discard Cheese Cracker Ingredients
- Texas Olive Oil
- Shredded Mixed Italian Cheese (or your favorite cheese blend)
- Chives (thinly sliced)
- Sourdough Discard
- Organic, All-Purpose Flour
- Flaky Salt (optional to add to the top of the Sourdough Discard Cheese Crackers)

Crafting the Sourdough Discard Cheese Cracker Dough
- First, preheat the oven to 325 degrees Fahrenheit.
- Next, in a glass or ceramic mixing bowl, combine all of the ingredients (except for the flaky salt).
- Then, using a Sourdough or Dutch Whisk, mix all of the ingredients (minus the salt) until just combined.
- Finally, pour the Sourdough Discard Cheese Cracker dough out onto a Nonstick Baking Sheet and spread it into an even layer.

The First Bake and Scoring the Crackers
- First, place the sheet of Sourdough Discard Cheese Cracker dough into the preheated oven.
- Next, bake for 10 minutes.
- Then, remove the sheet pan. Increase the temperature in the oven to 375 degrees Fahrenheit.
- Finally, score the crackers using a Pizza or Pasta Cutter. (You’ll want to score the crackers in the shape of a square or rectangle).
Bake for 10 Minutes at 325 Degrees Fahrenheit

The Second Bake, Serving, and Storing the Crackers
- First, bake the crackers for an additional 20-30 minutes, or until golden brown.
- Note: depending on your oven, it may take more or less time, so start with 20 minutes and then increase the baking time from there.
- Next, remove the crackers from the oven.
- Then, break up the crackers using a spatula.
- Next, allow the crackers to cool to room temperature.
- Finally, serve the crackers with any dip, on a charcuterie board, as a replacement for store-bought crackers, and more!
- To store, place the crackers in an airtight container and leave them on the counter for up to 1 week.

Notes
You can control the salt in these crackers by eliminating the sea salt that is sprinkled over the crackers after the first bake.
I would encourage you to use your favorite herbs to pair with the cheese in these crackers, or you can eliminate the herbs altogether depending on your taste preferences.
