Furthermore, when using this method, you will not have to wait 12-24+ hours for your dough to rise. You’ll only have to wait 5 hours!

What’s an Instant Pot?
An Instant Pot is a multicooker and has various functions such as pressure cooking, slow cooking, rice cooking, steaming, warming, sauteing, and fermenting. Furthermore, it is truly a game changer for all things, specifically for speeding up the processes of cooking, and in this instance fermenting Sourdough.

The Tested Instant Pot Dough
The dough that was tested for this experiment and method was Sourdough Pizza Dough.

Do you know when you wake up some mornings and get a hankering to make a full meal from scratch? Well, that’s how I felt a few weeks ago. In our house, we have a monthly-meal calendar with meals listed from Sunday through Saturday. Sundays are my husband’s day to choose what to buy and cook for us as a family, and Monday-Saturday is on me.

Fridays have become a “Build-Your-Own” something night. Furthermore, this “type” of night invites the whole family into the kitchen and allows us to all have fun creating our own version of the meal – it’s especially fun for kids!

The Build-Your-Own-Pizza Night Predicament
A few Fridays ago, I had planned to make Pesto Chicken Pizza and/or a Build-Your-Own-Pizza Night but forgot how long it took to make Sourdough Pizza Dough. My toddler was SO excited about helping make the pizza dough and building her own pizza, but I didn’t have enough time to wait for the 12-24 hours of traditional rising time for that dough.

Thus, I started thinking about how I could make the rising time shorter and/or still get the same result as letting the dough rise for 12-24 hours. During this thinking time, my friend texted me and reminded me she rose yeasted Stromboli dough in her Instant Pot a few weeks back, and she was wondering if I could do the same with Sourdough. This sparked the inspiration for this method and post.

In conclusion, I hope this method helps all bread bakers and inspires you to make a homemade meal from start to finish with your family at least once a week. This process was fun to test out with my toddler and made for a fun, creative, and exciting night!
The Instant Pot Dough Rise Method
Make the Sourdough Dough
- First, make the Sourdough Pizza Dough by combining all of the ingredients into a Bosch Universal Mixer.
- Next, turn the mixer on speed 3 and mix until the dough pulls away from the sides of the bowl and/or comes together.
Insert the Dough into the Instant Pot
- Then, rip off a piece of parchment paper and place it into the Instant Pot. Alternatively, you could insert a Bread Baking Mat.
- Next, take the Sourdough Pizza Dough out of the mixer and form it into a ball.
- Then, place the ball of dough into the Instant Pot (within the parchment paper or on top of the Bread Baking Insert).
- Next, seal the Instant Pot with the lid.

The Fermentation Process via the Instant Pot
- Then, turn the Instant Pot on and to the Yogurt setting.
- Next, choose the ferment option within the Yogurt setting.
- Then, select 4 hours to ferment.
- Next, press start.
- Then, allow the dough to ferment/rise in the Instant Pot for 4 hours.
- Finally, once the 4 hours have passed, instantly release the Instant Pot lid.

The Refrigerator Fermentation
- Once the Sourdough Pizza Dough has fermented (risen) in the Instant Pot for 4 hours, take the lid off of the Instant Pot.
- Next, remove the Sourdough Pizza Dough, stretch the sides of the dough out and around, and re-form the dough into a ball.
- Then, place the ball of dough into a lightly-oiled bowl or Banneton Bowl.
- Next, cover the bowl with a tea towel or plastic wrap.
- Finally, place the bowl into the refrigerator for 1 hour.

Take the Dough Out of the Instant Pot

Re-Form the Dough Into a Ball and Place it Into a Bowl

Cover and Refrigerate the Dough

The Dough is Ready to Use

The Results
Once the Sourdough Pizza Dough has risen in the Instant Pot and the refrigerator (a total of 5 hours), you are ready to use it however you want!

- Tea Towel or Plastic Wrap
- Parchment Paper or Silicone Bread Baking Insert
Instructions
Make the Sourdough Pizza Dough
- First, make the Sourdough Pizza Dough by combining all of the ingredients into a Bosch Universal Mixer.
- Next, turn the mixer on speed 3 and mix until the dough pulls away from the sides of the bowl and/or comes together.

- Finally, place the bowl into the refrigerator for 1 hour.
The Dough is Ready!
Once the Sourdough Pizza Dough has risen in the Instant Pot and the refrigerator (a total of 5 hours), you are ready to use it however you want!
Notes
This method was used on Sourdough Pizza Dough, however, most Sourdough doughs would also work. This method is ideally used to speed up the process of rising dough to use within the same day.
