Cajun Shrimp and Grits Ingredients

For the Cheesy Grits
- Chicken Bone Broth
- Oat or Coconut Milk
- Water
- Old-Fashioned Grits
- Unsalted Butter (or Vegan Butter)
- Shredded Cheddar Cheese (or dairy-free cheese)
- Parmesan Cheese (or dairy-free cheese)
- Cajun Seasoning
For the Shrimp
- Jumbo Gulf Shrimp, Peeled and Deveined
- Scallions, Thinly Sliced
- Cajun Seasoning
- Olive Oil
Marinating the Shrimp
- First, in a medium-sized glass mixing bowl, combine the Cajun Seasoning and Olive Oil.
- Next, add the shrimp. Stir the shrimp into the Cajun Seasoning to ensure the shrimp are fully coated.
- Then, cover the bowl with plastic wrap.
- Finally, place the shrimp into the refrigerator and allow them to marinate for at least 2 hours.

Making the Grits
- First, in an All-Clad pot, bring the Chicken Bone Broth, water, and salt to a boil.
- Next, add 1 tbsp. of butter.
- Then, slowly stir in the grits and stir continuously until the grits are well mixed.
- Next, bring the pot to a boil.
- Then, reduce the heat to the lowest setting, cover it with a lid, and let it simmer for 15-20 minutes. Stir after the first 5 minutes to prevent the grits from sticking; stir occasionally during the 15-20 minute cook time. If needed, add more broth or stock to the grits as they cook.
- Next, add the Oat Milk.
- Then, stir in the butter, cheddar, parmesan cheese, and Cajun seasoning.
- Finally, remove the grits from the heat and keep warm.
