King Cake Bundt Cake is a new twist on a Mardi Gras favorite, King Cake. Traditionally, King Cake is a sweet, buttery pastry (similar to brioche) that is covered in lots of icing and topped with purple, green, and yellow sprinkles. The History of King Cakes
According to The History of New Orleans, “The name, “King Cake,” comes from a Biblical story of the three kings who bring gifts to Baby Jesus.” Furthermore, the King Cake is a blend of a Coffee Cake and Cinnamon Roll and is usually iced in the colors of Mardi Gras – green, yellow, and purple.

These royal colors symbolize justice (purple), growth (green), and prosperity and wealth (yellow). In addition, these colors were chosen to resemble a “jeweled crown honoring the three wise men and their gifts during the Christ Child on Epiphany,” according to Randazzo, the Original King Cake. In conclusion, King Cakes symbolize the beginnings of the Lenten season leading up to Easter Sunday. They are a delicious treat and one to share with family and friends.

Hypoallergenic
King Cake Bundt Cake contains allergy-friendly ingredients. Although this pastry is not considered “healthy,” it does contain ingredients that gear toward the egg and dairy-free, and gluten-intolerant community.

Furthermore, this recipe substitutes eggs for Unsweetened Applesauce. Unsweetened Applesauce has a similar consistency to eggs which makes it an easy substitution. Furthermore, instead of dairy milk, Oat Milk is used. Oat Milk has a thicker consistency than Almond Milk which makes it the better non-dairy milk substitute for baking.

Finally, Active Sourdough Starter is incorporated into the dough which helps reduce the gluten content. The longer you allow the dough to ferment and rise, the more reduced the gluten will be. The recipe itself calls for a minimum of 6 hours of rising time, however, you can let the dough rise for up to 24 hours.

The Cinnamon Sugar Mixture Filling

The Vanilla-Cinnamon Glaze
- Powdered Sugar, Sifted
- Mexican Vanilla
- Ground Cinnamon
- Unsalted Butter, Melted
- Oat Milk
- Salt

Making the King Cake Dough
- First, combine warm milk and active yeast in a liquid mixing cup. Allow it to bubble or become active for 5 minutes.
- Next, using a Bosch Universal Mixer, combine all of the ingredients except the active dry yeast and flour. Mix to combine.
- Then, add the active dry yeast once it has fermented for 5 minutes into the Bosch Universal Mixer.
- Finally, add the flour and mix to combine on speed 2 or 3. Once the dough begins to pull away from the sides of the bowl, turn off the mixer. (The dough should be tacky, not sticky).

- First, take out the dough from the Bosch Universal Mixing bowl and form it into a ball.
- Next, place the dough into a Banneton Bowl and cover it with a tea towel.
- Finally, let the dough rise for 2 hours.

Preparing the King Cake Bundt Cake
- First, preheat the oven to 375 degrees Fahrenheit. Butter and lightly flour a Bundt Pan.
- Next, while the oven is heating, make the Cinnamon Sugar filling.
- Then, turn the risen dough out onto a lightly floured surface.
- Next, using a rolling pin, roll the dough out to a large rectangle (like you would do to make Sourdough Cinnamon Rolls).
- Then, take the Cinnamon Sugar filling and spread it evenly over the rolled-out dough.
- Next, roll the cake up, jelly-roll style (like you’d do with Sourdough Cinnamon Rolls), and pinch the seams down.
- Then, carefully place dough, seam side down, into the lightly floured Bundt Pan.
- Finally, place a tea towel over the top of the dough and let it rise for another 30 minutes to 1 hour.

Baking the King Cake Bundt Cake
- While the cake is on its second rise, make the Vanilla-Cinnamon Glaze. Set aside until the King Cake Bundt Cake has come out of the oven.
- Next, place the cake into the preheated oven and bake for 25-35 minutes, or until golden brown.
- Finally, loosen the edges of the cake with a butter knife, and then flip the cake out of the Bundt Pan and onto a serving tray. Allow it to cool completely prior to decorating.
