Tender riced cauliflower is roasted, and then gently simmered in creamy coconut milk, tossed with fresh cilantro and a splash of zesty lime juice, for a balance of rich, citrusy, and herbaceous flavors.

Coconut Lime Cilantro Cauliflower Rice

Roasting the Cauliflower Rice

  1. First, defrost the packages of cauliflower rice by following the directions on the package.
  2. Next, preheat the oven to 425 degrees Fahrenheit.
  3. Then, once the cauliflower rice is defrosted, evenly spread it onto a baking sheet.
  4. Next, drizzle with olive oil, salt, and pepper.
  5. Finally, roast the cauliflower rice for 12-15 minutes, or until the “rice” starts to turn golden brown.

Creating the Coconut Cilantro Lime Cauliflower Rice

  1. First, preheat a skillet over medium heat.
  2. Next, add the roasted cauliflower rice to the preheated skillet.
  3. Then, zest and juice the lime. Stir to combine.
  4. Next, add the cilantro, salt, and pepper. Stir to combine.
  5. Then, add the coconut milk; stir to combine.
  6. Finally, simmer the rice for 5-10 minutes, or until all the flavors are combined.

Serving and Storing

This is a delicious side dish that pairs perfectly with a variety of main courses. Some of my favorite main courses to pair this side dish with are: Greek Meatballs, Coconut Tarragon Chicken, Honey Tangerine Chicken, and Steak with Creamy Chimichurri Sauce.
