We all have been there – you look in your refrigerator or pantry and wonder, “What will I make tonight?” I was there this past week. I was tired of making ground Venison tacos and wanted to try something different. My family LOVES Venison Shepherd’s Pie and Chicken Pot Pie, so I thought, why not combine them and make something fun? Thus, came the inspiration for this recipe – Savory Venison Galettes.

Savory Venison Galette Ingredients
For the Savory Venison Filling
- Ground Venison (or another lean meat)
- Sweet Potato
- Yellow Onion
- Organic Carrots
- Frozen Petite Peas
- Dill Weed or Fresh Dill
- Oregano
- Salt and Pepper
- Chicken or Beef Bone Broth
- All Purpose Flour

For the Galette Dough
- All Purpose Flour
- Whole Wheat Flour
- Unsalted Butter
- Salt
- Cold Water
- Cornmeal
- Or 1 Batch of Sourdough Discard Pie Crust (eliminate the sugar for a savory crust)

Savory Venison Galette
How to Make Savory Venison Galettes is your one-stop shop for making a delectable and family-friendly meal. This dish is a combination of Venison Shepherd's Pie and a Meat Pot Pie which will leave your family full and happy!
Ingredients
For the Savory Venison Filling
- 1 lb. ground Venison (or another lean meat)
- 1 Sweet Potato, peeled and diced
- 1/2 Yellow Onion, Diced
- 3-5 Organic Carrots, peeled and diced
- 2 c. Frozen Petite Peas
- 1/2 tsp. Dill Weed or Fresh Dill
- 1 - 2 tbsp. ground Oregano
- Salt and Pepper (To Taste)
- 1 - 1/2 c. Chicken or Beef Bone Broth
- 1/4 c. All Purpose Flour
For the Savory Galette Crust
- 1 c. Whole Wheat Flour
- 1 c. Organic All-Purpose Flour
- 1/2 c. Unsalted Butter, cold and grated
- 1/2 tsp. Salt
- 4-5 tbsp. Cold Water (more as needed)
Instructions
Create the Savory Galette Crust
- First, combine the flour, salt, and grated unsalted butter in a mixing bowl.
- Next, add the cold water until a dough forms.
- Finally, divide the dough into two, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Prepare the Filling
- First, heat a skillet over medium heat and drizzle with Avocado or olive oil.
- Next, add the sweet potatoes, onions, and carrots. Season with salt and pepper.
- Then, cook the vegetables until just softened (10-15 minutes).
- Next, add the ground Venison (or another ground lean or game meat). Add salt and pepper, dill weed, and oregano. Stir to combine.
- Then, cook the meat until browned (about 10-12 minutes). Add the petite peas.
- Next, sprinkle the meat and vegetables with the all-purpose flour and stir to combine.
- Then, add the bone broth and stir until combined. Bring the mixture to a boil and then reduce it to a simmer until thickened.
- Finally, turn the heat off and allow the filling to cool to room temperature.
Create the Savory Venison Galettes
- Preheat the oven to 350 degrees Fahrenheit.
- Next, remove the refrigerated dough and roll it onto a lightly floured surface.
- Then, sprinkle cornmeal onto a baking sheet and place the discs of pie dough onto the baking sheet.
- Next, scoop 2 cups of meat filling into the centers of each pie disc, leaving a 2-inch border.
- Then, pull the edges of the pie crust towards the filling and crimp or fold over to seal.
- Finally, brush the crust with olive oil or melted butter before baking.
Bake and Serve the Savory Venison Galettes
- Once the oven is preheated, place the Savory Venison Galettes into the oven for 35 minutes.
- Next, bake the galettes until lightly browned.
- Then, remove the baked Savory Venison Galettes and allow them to cool for 3-5 minutes.
- Finally, using a pizza cutter or a sharp knife, cut the galettes into fourths, serve, and enjoy!
