Matcha-Dragon Fruit Slice and Bake Cookie Ingredients
- Unsalted or Vegan Butter
- Granulated Sugar or Monk Fruit Sugar Substitute
- Baking Powder
- Pink Salt
- Carbonated Water
- Mexican Vanilla
- Gluten-Free Flour
- Dragon Fruit Powder
- Matcha Powder

Creating the Matcha-Dragon Fruit Slice and Bake Cookie Dough
- First, in a Kitchen Aid Stand Mixer, beat the butter until light and fluffy (about 1-3 minutes).
- Next, beat in the carbonated water and Mexican vanilla.
- Then, add the sugar (or sugar substitute), baking powder, and pink salt. Beat to combine.
- Next, add in the Gluten-Free flour, one cup at a time.
- Then, divide the cookie dough into two mixing bowls.
- Next, knead the Dragon Fruit powder into one cookie dough; knead the Matcha powder into the other cookie dough.
- Note: You can also mix it in with the paddle attachment on the Stand Mixer.
- Then, wrap each flavor of dough with plastic wrap.
- Finally, place the Matcha-Dragon Fruit Slice and Bake Cookie Dough in the refrigerator for 30 minutes.
Beat the Butter and Sugar Until Light and Fluffy

Add the Carbonated Water and Vanilla

Mix in the Sugar, Baking Powder, Pink Salt, and 1 Cup of Flour

Add the Last Cup of Flour and Mix to Combine


Divide the Dough Into Two Bowls – Mix In the Matcha and Dragon Fruit




Wrap Each Flavored Dough In Plastic Wrap; Refrigerate



Forming the Matcha-Dragon Fruit Slice and Bake Cookies
- Once the cookie dough has chilled for at least 30 minutes, lightly flour a kitchen surface.
- Next, roll each of the cookie doughs on a lightly floured surface until about 1/8-inch in thickness.
- Then, place the Dragon Fruit cookie dough down on the surface. Place the Matcha cookie dough on top (or vice versa).
- Next, gently press down on all surfaces of the dough. (This is to make sure the doughs are touching).
- Then, roll the cookie dough up in a spiral (much like how you roll Sourdough Cinnamon Roll dough).
- Finally, cover the roll of spiraled cookie dough with plastic wrap and freeze it for 1 hour.

Roll the Cookie Dough In a Spiral (Log)

Baking, Serving, and Storing the Matcha-Dragon Fruit Slice and Bake Cookies
- About 15 minutes before taking the dough out of the freezer, preheat the oven to 350 degrees Fahrenheit.
- Next, line two baking sheets with parchment paper or silicone baking sheets.
- Then, remove the chilled cookie dough from the freezer and place it on a cutting board.
- Next, cut the log of Matcha-Dragon Fruit Slice and Bake Cookie dough into 1/4 inch slices. Place them on the prepared baking sheets about 2 inches apart.
- Then, bake the cookies for 8-10 minutes.
