Furthermore, this recipe was inspired by Little Spoon Farm’s Sourdough Coffee Cake, but it was adapted for the food allergy community. Finally, eat this for breakfast, brunch, or dessert, and enjoy!

Sourdough Coffee Cake Ingredients
The Streusel Topping
Cinnamon Sugar Filling
Sourdough Coffee Cake Batter
- Unsalted Butter
- Coconut Sugar
- Carbonated Water (or another Egg Substitute)
- Mexican Vanilla
- Greek Yogurt, Plain
- Sourdough Discard
- Oat Milk
- Pink Salt
- Baking Powder
- King Arthur All-Purpose Flour or Cake Flour
- 1Mascarpone Cream Cheese Glaze (Optional)
Making the Crumble/Streusel Topping
- First, melt the butter in a microwave-safe bowl.
- Next, stir in the Coconut Sugar and Cinnamon until smooth.
- Then, add the flour and mix until the mixture comes together like a clumpy mass.
- Finally, set the streusel topping to the side and let it cool.

Creating the Cinnamon Sugar Mixture
- In a small mixing bowl, combine the Cinnamon, Coconut Sugar, and flour.
- Set the bowl aside.

Creating the Sourdough Coffee Cake Batter
- First, preheat the oven to 350 degrees Fahrenheit.
- Next, lightly grease a baking pan or Bundt pan with Avocado Oil or Baking Spray.
- Then, in a large mixing bowl, combine all of the ingredients.
- Next, with a Dutch Whisk, combine all of the ingredients until just combined.
- Finally, set the batter aside.

The Batter is Ready to Pour Into the Prepared Pan

Baking the Sourdough Coffee Cake
- First, pour half of the Sourdough Coffee Cake batter into the lightly greased, baking, or Bundt pan.
- Next, sprinkle the cinnamon sugar mixture evenly across the batter.
- Then, carefully pour the remaining Coffee Cake batter over the Cinnamon Sugar mixture.
- Next, use a silicone spatula to gently spread the batter evenly across the pan.
- Then, break up the crumble or Streusel topping and sprinkle it across the top.
- Finally, bake the Sourdough Coffee Cake for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean. Enjoy!
- Note: If you bake it in a baking pan, you will want to let the bars cool slightly prior to cutting and serving them. However, if you bake it in a Bundt pan, you’ll want to remove the cake from the pan as soon as you take it out of the oven. Then, let it cool slightly and enjoy!
