Citrus Herb Brine for Chicken Ingredients

Making the Citrus Herb Chicken Brine

  1. First, place 6 cups of water, salt, and all other ingredients in a Nonstick, All-Clad saucepan.
  2. Next, bring the mixture to a boil and let simmer for 5-10 minutes, stirring to allow the salt to fully dissolve.
  3. Then, remove from heat and let the water cool down to room temperature.
  4. Next, place the chicken in the brining bag and cover it with the salt mixture.
  5. Then, add the remaining water.
  6. Next, the chicken should be fully submerged – use a plate to weigh it down if you need to.
  7. Then, if additional water is needed, add 1 cup of water and 1 tablespoon of salt until fully submerged.
  8. Next, let the chicken sit for at least 12 hours, 24 preferred.
  9. Then, remove the chicken from the brine, rinse, and discard brining liquid.
  10. Finally, roast the chicken according to the Citrus and Herb Roasted Chicken recipe (or your favorite recipe in general).

  • 14 c. Water
  • 3 Bay Leaves
  • 3 Garlic Cloves, Smashed
  • 1/2 Bunch of Thyme
  • 4 Sage Leaves
  • 1/2 Bunch of Rosemary
  • 1 tbsp. Black Peppercorns
  • A Peel of 1 Orange
  • A Peel of 1 Meyer Lemon
