Citrus Herb Brine for Chicken Ingredients
Making the Citrus Herb Chicken Brine
- First, place 6 cups of water, salt, and all other ingredients in a Nonstick, All-Clad saucepan.
- Next, bring the mixture to a boil and let simmer for 5-10 minutes, stirring to allow the salt to fully dissolve.
- Then, remove from heat and let the water cool down to room temperature.
- Next, place the chicken in the brining bag and cover it with the salt mixture.
- Then, add the remaining water.
- Next, the chicken should be fully submerged – use a plate to weigh it down if you need to.
- Then, if additional water is needed, add 1 cup of water and 1 tablespoon of salt until fully submerged.
- Next, let the chicken sit for at least 12 hours, 24 preferred.
- Then, remove the chicken from the brine, rinse, and discard brining liquid.
- Finally, roast the chicken according to the Citrus and Herb Roasted Chicken recipe (or your favorite recipe in general).
Bring the Ingredients to a Boil

Simmer for 10 Minutes

Cool and then Pour Over the Chicken

- A Peel of 1 Orange
- A Peel of 1 Meyer Lemon
