Pesto Shrimp Skewers are an easy and healthy meal. Peeled and deveined shrimp are marinated in Spinach Walnut or Spinach Pistachio Pesto and then grilled to perfection. Alongside the shrimp, serve a side salad, grilled spring vegetables, Quinoa, Pea Pesto Risotto, or Pesto Orzo Pasta for a well-rounded meal.

Pesto Shrimp Ingredients
- Spinach Pistachio Pesto
- Shrimp, Peeled, and Deveined
- Lemon, Juiced

Marinating the Shrimp
- First, in a medium-sized glass bowl, place the peeled and deveined shrimp into it.
- Next, pour the Spinach Pistachio Pesto on top and mix it with the raw shrimp.
- Then, cover the bowl with plastic wrap.
- Finally, place the Pesto Shrimp into the refrigerator for at least 30 minutes to marinate (or longer if time allows).

Cooking the Pesto Shrimp
- First, heat an indoor grill pan or outdoor grill to 350-375 degrees Fahrenheit.
- Next, take the shrimp out of the refrigerator and allow them to warm up to room temperature prior to placing them on the grill.
- Then, skewer the shrimp onto either pre-soaked wooden or metal skewers.
- Next, grill the shrimp for 2-3 minutes on one side, and then flip them over and grill for 2-3 minutes on the second side, or until opaque.
- Finally, pull the skewered shrimp off the grill and immediately squeeze fresh lemon juice over the top. Serve immediately.
