The Ingredients

  • Vegan Mayo
  • Lemon Zest
  • Lemon Juice
  • Minced Garlic
  • Ground Black Pepper

Creating the Aioli

  1. First, in a small, glass mixing bowl, add the Vegan Mayo and stir to remove any lumps.
  2. Next, add the zest, juice, minced garlic, and pepper. Mix all of the ingredients together.
  3. Then, cover the bowl with plastic wrap and refrigerate for at least 1 hour.
  4. Finally, pour into a small serving bowl and serve alongside the shrimp cakes.

Making the Cajun Shrimp Cake Mixture

  1. First, pat the shrimp dry with paper towels.
  2. Next, using a sharp knife, dice the shrimp into bite-sized pieces.
  3. Then, transfer the chopped shrimp to a large, glass mixing bowl.
  4. Next, add the mustard, parsley, chives, garlic, and seasonings. Stir to combine.
  5. Then, add the flour and stir again until the batter is creamy and well combined.
  6. Finally, using an ice cream or cookie scoop, scoop out the batter, flatten it with your hands, and then place it on a plate. Repeat this process until the shrimp cake batter is used.

“Frying” the Cajun Shrimp Cakes

  1. First, take out the Air Fryer.
  2. Next, place 3 to 4 Cajun Shrimp Cakes in the basket of the Air Fryer.
  3. Then, turn the heat to 400 degrees Fahrenheit and “fry” for 5 minutes.
  4. Next, flip the fritters over and “fry” them for another 5 minutes.
  5. Finally, serve the Cajun Shrimp Cakes hot or warm. Serve them alongside the Vegan Lemon Aioli and/or with Grit Cakes. Enjoy!

Place Raw Shrimp Cakes into the Air Fryer Basket and Flip Over after 5 Minutes

Flip Over to the Second Side
“Fry” the shrimp cakes on one side and then flip over to the second side. This will allow both sides to get crispy on the exterior.

Cajun Shrimp Cakes

  • 1 lb. Raw Shrimp, Peeled and Deveined
  • 2 Garlic Cloves, Minced
  • 1 tsp. Avocado Oil
  • 1/4 c. Dijon Mustard
  • 2 tbsp. Parsley (dried or fresh)
  • 2 tbsp. Chives, Thinly Sliced
  • 1/2 tsp. Pink Salt
  • 1/8 tsp. Ground Black Pepper
  • 1 tsp. Trader Joe's Green Goddess Seasoning
  • 1/2 c. Organic, All Purpose, or Gluten-Free Flour (Can Also Substitute for Almond Flour)
