Allergy-Friendly

The Empanada dough is made using Vegan Empanada Dough. Vegan Empanada Dough will become your new, go-to empanada dough. This dough is made with allergen-friendly ingredients including Oat Milk and Active Sourdough Starter.

Oat Milk is creamy, oaty (hence the name), and a perfect substitute for dairy milk. Adding this to the empanada dough provides a creaminess to the dough that gives it that desirable empanada texture. However, if you have an oat allergy, any non-dairy milk will work in this recipe.

Furthermore, Active Sourdough Starter is incorporated and gives the dough an extra layer of tenderness. Sourdough Starter also provides health benefits to the dough itself as it helps to break down the gluten within the empanada dough. Remember, the longer you allow the dough to rise and ferment, the more you will reduce the gluten within the dough.

Making the Cinnamon Apple Filling

  1. First, peel the apple and cut it into small, bite-sized pieces.
  2. Next, place the apple pieces into an All-Clad pot.
  3. Then, add in the cinnamon, sugar, orange juice, applesauce, and Bourbon and stir to combine.
  4. Next, bring the mixture to a boil and then reduce the heat to a simmer.
  5. Then, allow the Cinnamon Apples to simmer for about 15-20 minutes or until soft.
  6. Next, turn the heat off and allow the mixture to cool prior to filling the empanadas (you can make this ahead of time).

Bring the Cinnamon Apple Mixture to a Boil

Then, bring the mixture to a boil over medium heat.

Reduce the Heat and Simmer

Simmer the Cinnamon Apple Filling
Next, reduce the heat to a simmer and simmer for 15-20 minutes or until the apples are soft and have a slight crunch. Finally, cut the heat off and allow the mixture to cool completely prior to filling the empanada discs (you can also do this ahead of time).

Filling the Empanada Dough

  1. After the Vegan Empanada Dough has rested and risen (for at least 8 hours), lightly flour a surface.
  2. Using a rolling pin, roll the dough out to about 1 inch of thickness.
  3. Next, using a 3 to 4-inch round cutter, cut the dough into discs. Reroll the dough and repeat steps 2 and 3 until all of the dough has been used.
  4. Next, fill a small mixing bowl with cold water.
  5. Then, take 1 tbsp. of the baked Cinnamon Apples and place them in the center of the Empanada dough disc.
  6. Then, take your pointer finger and dip it into the cold water. Trace your wet finger around the edges of the dough.
  7. Next, fold the dough over the top of the filling, and then using your wet finger, press to seal the dough.
  8. Then, crimp the edges by pressing a fork around the edges of the dough to seal it, or pull the dough outward and then press it inward. Repeat steps 5-8 until all Empanada discs have been filled, sealed, and crimped.

Fold Over, Press, and Seal the Empanada

Finally, fold, press, and seal the empanadas prior to brushing them with the Cinnamon Empanada Paint (recipe below).

Mixing the Cinnamon Empanada Paint

  1. First, in a small glass mixing bowl, pour in the water and ground cinnamon.
  2. Next, using a fork or whisk, mix together the ingredients.
  3. Finally, set aside until later.

Baking the Apple Cinnamon Empanadas

  1. First, preheat the oven to 450 degrees Fahrenheit.
  2. Next, place the unbaked Apple Cinnamon Empanadas on nonstick baking sheets.
  3. Then, using a pastry brush, paint the tops and edges with melted butter or Cinnamon Empanada Paint. This will help them develop that golden brown crust while baking.
  4. Once the oven is preheated, pop the Empanadas in the oven and bake for 10-15 minutes.
  5. Then, place the Apple Cinnamon Empanadas on a wire rack to cool slightly prior to eating.
  6. Finally, serve them warm or at room temperature, and enjoy!

As with most baked goods, these Empanadas are best if eaten the same day as you baked them. However, if you happen to have leftovers, you can store them in an airtight or Tupperware container and in the refrigerator for up to 1 week.

  • 4 tbsp. Unsalted Butter, Melted

  • 1-2 Granny Smith or Honey Crisp Apples, Peeled and Diced
  • 2 tsp. Ground Cinnamon
  • 1/4 c. Brown Sugar or Coconut Sugar
  • 1 Shot of Breckenridge Bourbon
  • 2 tbsp. Orange Juice
  • 1/4 c. Unsweetened Applesauce

  • 1/2 c. Water
  • 2 tbsp. Ground Cinnamon

Notes
