Ever tried to make homemade donuts and they turn out to look more like muffins? Welcome to the invention of the Donut Muffin! Pumpkin Donut Muffins have the look of a classic baked donut on the bottom and a muffin on top. These donuts are tender, full of pumpkin spice flavor, and have a twist on the classic muffin or donut.

Allergy-Friendly
I was originally inspired to craft Pumpkin Donuts after buying a Donut Pan from King Arthur Baking Company and receiving their recipe for Pumpkin Cake Doughnuts. However, like most donut recipes, this recipe contained eggs and vegetable oil which are both no-no’s for me.

As with most recipes I make, I substituted the three eggs in King Arthur’s Pumpkin Cake Doughnuts for 3/4 c. Unsweetened Applesauce. If you do not have applesauce available to use, you could easily 3/4 c. of additional Pumpkin puree in lieu of eggs.

In addition, Vegetable Oil was substituted for Avocado Oil. Avocado Oil is less inflammatory than Vegetable Oil which is healthier for all. Avocado Oil is also healthier for those who have Autoimmune Disorders!
Finally, 2 tbsp. of Active Sourdough Starter was added to the batter to give the texture of the donuts a bit more tenderness making these the perfect bite.
Homemade Pumpkin Spice

Making the Homemade Pumpkin Spice Mix
- Ground Cinnamon
- Ground Ginger
- Ground Nutmeg
- Ground Allspice
- Ground Cloves
- In a glass mixing bowl, mix all of the ingredients together and then set aside.
- For this recipe as a whole, you will use about 1/2 of the Pumpkin Spice. The other half you can store in a ziploc bag or airtight container for up to 3 years!
The Pumpkin Donut Muffin Ingredients
- Avocado Oil
- Unsweetened Applesauce
- Coconut Sugar
- Pumpkin Puree
- Pumpkin Spice
- Pink Salt
- Baking Powder OR 2 tbsp. Active Sourdough Starter
- King Arthur’s Organic, All-Purpose Flour
Crafting the Donut Muffin Batter
- First, preheat the oven to 350 degrees Fahrenheit.
- Next, in a large glass or ceramic mixing bowl, mix together the dry ingredients.
- Then, pour in the Avocado Oil and mix until combined.
- Next, mix in the applesauce, Pumpkin puree, and Sourdough Starter.
- Finally, using a Sourdough Batter Whisk, mix the batter until just combined. Be careful not to overmix as you’ll make tough donuts instead of tender ones.

Preparing the Donut Muffin Pan
- First, pour or spoon the batter into a piping or gallon, Ziploc bag.
- Next, oil the Donut Pan by spraying it with Avocado Oil Spray or buttering the pan. If you do not have a Donut Pan, you can use a parchment-lined baking sheet (you just may have more rustic-looking donut muffins).
- Then, if using a Ziploc bag, cut a small piece of the corner of the bag off and carefully pipe the Pumpkin Donut Muffin batter into each circle of the donut pan.
- Next, pop the Donut Muffins into the oven for 12-15 minutes, or until the Pumpkin Donut Muffins spring back when you touch them.
- Then, allow them to cool for 5 minutes in the donut pan prior to removing them to a cooling rack to cool completely.
- While the Pumpkin Donut Muffins are cooling, make the Pumpkin Glaze that the donuts will be dipped into.
- Finally, once the Pumpkin Donut Muffins are cool to the touch, dip them into the glaze, and then into Sparkling Sugar (if you choose). Enjoy!
