Ground Bison Tacos are an allergen-friendly meal for all. Ground Bison is in the Game Meat family which means it comes from any land animal hunted for food (aka Bison). It has a rich, sweet flavor which makes it easy to cook and healthy! Ground Bison provides portions of iron, magnesium, calcium, zinc, and other minerals. Bison “contains 25% fewer calories than Beef and is lower in total saturated fat” (quoted from Healthline Nutrition). Furthermore, in a 4 oz. serving of Bison, it has nearly 20 grams of protein, 146 calories, and 7 grams of fat. Bison is carried throughout most local grocery stores such as Costco, Fresh by Brookshires, H-E-B, Sprouts, and Tom Thumb. In addition, most meat markets such as Wild Fork Foods also carry Bison. This is a meat you can generally locate easily and it’s 100% worth a try!
In addition to lean Ground Bison, Sourdough Starter Tortillas are significantly more gluten reduced than traditional flour tortillas you purchase at the store. However, if you do not have time to make these Sourdough Starter Tortillas, Siete Food Tortillas are equally as tasty and are also allergen friendly.
Ground Bison Taco Ingredients
- Ground Bison
- Siete Taco Seasoning (Mild or Spicy)
- Yellow Bird Hot Sauce
- Spinach or Shredded Lettuce
- Sourdough Starter Tortillas or Siete Tortillas
- Avocado, Sliced
- Bell Peppers, Julienned Sliced
- Mexican Cheese Blend, Shredded

Crafting the Perfect Taco
- First, in a nonstick, All-Clad Skillet over medium heat, mix the Ground Bison and Siete Taco Seasoning together and brown until no more pink is showing (approximately 8-10 minutes).
- Next, take the cooked meat out of the pan and place it in a bowl in the microwave (to keep warm).
- Then, toss in the julienned Bell Peppers and cook for 5-8 minutes or until blistered (there should be black, blister marks on the skin of the peppers).
- Next, turn off the heat under the skillet.
- Then, build the Ground Bison Taco by grabbing a cooked Sourdough Starter Tortilla layering 1/8 c. or 6 Spinach leaves on the bottom, and then spooning 1/4 c. cooked, Ground Bison over the Spinach leaves. Next, lay the blistered bell peppers over the Ground Bison, then lay the slices of Avocado, and sprinkle a light (or heavy) layer of shredded Mexican Cheese over the top. Finally, drizzle your favorite Yellow Bird Hot Sauce over the top of the taco and enjoy!

Notes
- These tacos are made with Ground Bison, but if you're unable to locate Ground Bison, any lean meat will work.
- If you do not have time to make homemade tortillas, try using Siete Foods Tortillas which are grain-free, allergen friendly, and delicious!
