Allergen Friendly

Sourdough Starter Tortillas are allergy-friendly and gluten-reduced. Because the tortilla dough takes 12+ hours to rise, the gluten content is significantly reduced due to the Active Sourdough Starter. However, if you need for the tortilla dough to be 100% gluten-free, you can always substitute the two types of flour for King Arthur’s 1:1 Gluten Free Flour.

Sourdough Starter Tortillas are made with a mix of Whole Wheat and All Purpose Flour. However, if you need it to be 100% gluten-free, you can always substitute the flour for 1:1 Gluten Free Flour.

Sourdough Starter Tortilla Ingredients

Creating the Perfect Tortilla Dough

  1. First, in a Bosch Mixer, combine the wet ingredients for the Sourdough Starter Tortillas. Turn the mixer on to speed 1 and mix the ingredients together.
  2. Next, add the salt, Whole Wheat Flour, and All Purpose Flour into the mixing bowl.
  3. Then, turn the mixer on to speed 2 and combine all of the ingredients. The dough will be ready when it pulls away from the side of the bowl.
  4. Next, turn the mixer off, and pull out the dough.
  5. Then, roll the tortilla dough into a ball and place it in a Banneton Bowl or lightly-oiled glass bowl.
First, combine all of the wet ingredients for the tortillas in the bowl of a Bosch Mixer. Next, pour 1 cup of Whole Wheat Flour into the Bosch Mixer.
Then, add the All Purpose Flour.
Next, turn the Bosch Mixer on to speed 2 and mix all the ingredients together.
The tortilla dough is pulling away from the edges of the bowl and clinging to the dough hook. This means it’s time to pull the dough out, roll it in a ball, and let it rise.

Let the Tortilla Dough Rise

  1. Cover the bowl with a tea towel, set it in a warm place in your kitchen, and let it rise for at least 12 hours.
  2. After the 12 hours have passed, lightly flour a kitchen surface (i.e. your counter or kitchen island), and place the dough onto the lightly floured surface.
Then, form the Sourdough Tortilla dough into a ball, cover it with a tea towel, and let it rise for 12+ hours.
The Sourdough Starter Tortilla dough has risen for 12 hours, and it is ready for the next step!

Rolling Out the Tortillas

  1. Next, pull off 1 1/2 inch in diameter balls of the tortilla dough, push to flatten the dough, and then use a rolling pin to roll the dough as thin as possible. Repeat this step until all of the dough has been pressed into tortillas.
Next, using your hands, take off a 1 1/2 inch in diameter ball of dough, flatten it with your hand, and roll it out as thin as you can (try and keep the circular shape if you can). Then, place it in a hot Lodge Cast Iron Skillet and cook it.

Cooking the Tortillas

  1. Then, heat a Lodge Cast Iron Skillet to medium heat.
  2. Once the skillet is screaming hot, place one tortilla into the skillet. Cook for about 2-3 minutes on the first side and then flip over (once you see bubbles forming on the dough, it is time to flip the tortilla over to the second side).
  3. Cook the tortilla on the second side for another 1-2 minutes, and then remove it from the pan and onto a wire, cooling rack.
  4. Finally, use the Sourdough Starter Tortillas in Ground Bison Tacos, Tostadas, or quesadillas. Enjoy!
Then, place the tortilla dough in a HOT Lodge Cast Iron Skillet.
When the tortilla dough begins to bubble (look at the left side of this image), this means it’s time for the tortilla to be flipped to the second side.
This is how the first side of the tortilla looks after it’s been flipped – beautifully cooked with pockets of color. This is what you’re looking for!

Where Do I Let the Tortillas Cool?

Next, place the cooked tortillas on a wire, cooling rack to allow them to cool and keep their crisp and tender texture. On the right side of the wire rack, the rolled tortilla dough sits and waits to be cooked in the Lodge Cast Iron Skillet.

  • 1 c. Active Sourdough Starter
  • 3/4 c. Water
  • 1/4 c. Avocado Oil
  • 1 tsp. Flaky Salt
  • 2 1/2 c. Organic, All Purpose Flour
  • 1 c. Organic, Whole Wheat Flour

Instructions

  1. First, in a Bosch Mixer, combine the wet ingredients for the Sourdough Starter Tortillas. Turn the mixer on to a speed 1 and mix the ingredients together.
