Chicken Salad Melt

Chicken Salad Melt is the perfect sandwich for an easy weekday lunch. Fresh Chicken Salad topped with your favorite cheese and perfectly squished between two, tender slices of Sourdough Sliced Bread makes this sandwich hard to resist.

Chicken Salad Melt is made with eggless Chicken Salad. The Chicken Salad Melt is also made with Homemade Sourdough Sliced Bread which substitutes Unsweetened Applesauce in lieu of an egg.

The Ingredients

Piecing the Melt Together

  1. First, using a serrated knife, slice the Sourdough Sliced Bread into two, 2-inch slices.
  2. Next, squirt 1-to-2 tsp. of Dijon mustard on one slice of the bread. Spread evenly with a knife.
  3. Then, take 1-to-2 tbsp. of Chicken Salad and spread it evenly across one of the bread slices.
  4. Next, top the Chicken Salad with Provolone cheese (or your favorite sliced cheese).
  5. Then, add a couple of fresh, spinach leaves over top of the cheese. Place the other slice of bread on top of the spinach leaves to create a sandwich.
  6. Next, heat a pan over medium heat and melt a tbsp. of unsalted butter.
  7. Gently lay the sandwich into the melted butter and cook for about 2-3 minutes on one side.
  8. Then, carefully flip the sandwich over to the other side and toast the second side for about 2 minutes.
  9. Finally, remove the Chicken Salad Melt, slice it in half using a Serrated Knife, and enjoy!
  10. This Chicken Salad Melt can be served with a side salad, fresh fruit, or chips, but it is also amazing all by itself! Enjoy!
To create a crispy crust/exterior on your melt, anchor your sandwich down with a Cast-Iron Skillet.

  • Chicken Salad
  • Sourdough Sliced Bread or Trader Joe’s Sandwich Bread
  • Dijon Mustard
  • Provolone Cheese Slices (or your favorite sliced Cheese)
  • Spinach Leaves
  • 1 tbsp. Unsalted Butter

Instructions

  1. First, using a serrated knife, slice the Sourdough Sliced Bread into two, 2-inch slices.

Notes

This recipe calls for Homemade Chicken Salad. You may make your own Chicken Salad or use store-bought (if you're short on time).

This recipe calls for homemade Sourdough Sliced Bread. If you do not have time to make Sourdough Sliced Bread, you can substitute your favorite bread.

Feel free also to mix up the type of cheese or greens you use to make your Melt mirror your eating preferences.
