The Inspiration
Winter weather brings comfort food to the forefront. Bowls of steaming hot soup or stew curled up under a blanket, and nestled next to the fire are the perfect winter night meal.

As I child, I remember eating a few meals that still resonate with me as the coziest comfort food meals. One of these meals was Chicken and Dumplings. Chicken and Dumplings is the ultimate comfort food with pillowy-soft dumplings and flavorful chicken in a thick, delectable broth.

Hypo-Allergenic Dumplings
The Chicken and Dumplings I grew up with had homemade dumplings that were made with 3-4 eggs and whole milk. However, after being diagnosed with food allergies, I needed a change. Thus, I crafted these delicious Sourdough Herb Dumplings.
Instead of using eggs to make these dumplings, I substituted the eggs for 1 pouch of unsweetened applesauce (which equals about 1/2 cup of applesauce). In addition, I used Oat milk instead of dairy whole milk for extra moisture in the dumplings. Both of these ingredients are allergy-friendly and will make you come back for more rounds of these dumplings whenever the cold weather sets in.
Sourdough Herb Dumpling Ingredients

The Ingredients
- Organic, All-Purpose Flour
- Active Sourdough Starter
- Baking Powder
- Olive Oil (Avocado Oil would also work)
- Unsweetened Applesauce
- Pink Salt
- Pepper to Taste
- Fresh Thyme to Taste (or any fresh or dried herb of your choice)
- Oat Milk
Mix Up the Ingredients for the Dumplings
- First, in a large glass or ceramic mixing bowl, pour in the flour and Active Sourdough Starter.
- Next, add the baking powder, olive oil, applesauce, and salt. Mix with a whisk or fork to combine.
- Then, add in Oat Milk until you’ve achieved the desired consistency – you’re looking for your dough to be sticky and wet. However, the dough shouldn’t be swimming in liquid.
- Next, add ground black pepper to taste (I added about 1/2-1 tsp.).
- Then, add any fresh or dried herb of your choice (I used fresh Thyme today, but you could also add Basil, Chives, Rosemary, Italian Seasoning, and more).
- Mix your dumpling dough until all ingredients are combined.




Cover the Dumpling Dough and Let It Rise
- Next, cover the dough with a kitchen towel and allow the dumplings to rise for 1+ hour.
- Remember: the longer the sourdough starter ferments, the more gluten-reduced the dumplings will be. The sourdough starter will also pack in more of that loved sourdough flavor the longer it ferments.




Time to Cook the Dumplings
- Then, it’s time to cook the herb dumplings!
- If you’re adding this to your favorite soup or stew, simply drop them by the 1/4 c. measuring cup into the broth. Cover the soup pot with the lid and cook the herb dumplings for 10-15 minutes. The dumplings should rise to the top when they’re ready. Serve hot and enjoy!
- If you’re cooking these dumplings on their own, bring a large pot of water or broth to a boil. Drop the herb dumplings in by 1/4 c. and cook for 10-15 minutes with the lid on. The herb dumplings will rise to the top when they’re ready. Enjoy!

- Finally, it's time to cook the dumplings! If you're adding the dumplings to a soup or stew, add them directly into the cooking broth, bring the broth to a slight boil, and allow the dumplings to cook for 10-15 minutes. If you're cooking the dumplings on their own, add them to boiling water or broth and cook for 10-15 minutes.
