Another allergy-friendly recipe has arrived! This recipe is made with simple ingredients that are friendly to all food consumers.
Zucchini is turned into beautiful “spaghetti-like” Zoodles which create a delicious and nutritious low-carb side. If you are not a Zucchini lover, you can also easily substitute this for Spaghetti Squash, Yellow Squash, or Sweet Potatoes!

Opa’s Smoked Chicken Sausage is the main protein in this dish and is gluten-free! This smoked sausage is made with Chicken Thighs, Poblano Peppers, and Monterrey Jack Cheese. If you are lactose-in-tolerant or trying to be completely dairy-free, you can of course substitute this for any other cheese-free sausage. (Tip: Ask your local grocery store butcher for recommendations! They usually know of the better products to choose from, especially if you’re looking for a specific flavor profile).

Preparing the Chicken Sausage

- First, open the packaging of the Chicken Sausage.
- Then, cut the ends off of the sausage and toss.
- Next, cut the sausage into 1-to-2-inch slices.
- Then, preheat a skillet over medium-high heat. Add the slices of chicken sausage to the pan.
- Cook the chicken sausage for 4-5 minutes on one side and then flip over. You should see a crust form on the first side prior to flipping it.
- Allow the sausage to cook another 3-5 minutes on the second side and then remove it from the pan. Place the sausage on a towel-lined plate and set aside.
- The towel-lined plate allows for any extra grease or fat to drain off of the sausage. If you’re using pork sausage, you will see more grease in your pan and/or on the towel. Chicken Sausage is typically less fattening, so you will not see as much excess fat drain as the slices of sausage are cooling.
The Zoodling Process

- First, take out your spiralizer (this has literally become one of my favorite kitchen tools).
- Within the spiralizer (the 10-blade edition), insert the Spaghetti Noodle blade.
- Then, take one Zucchini, chop off both ends, and place it within the holder of the spiralizer. Carefully turn the handle of the spiralizer and watch all the magical spaghetti Zoodles exit into the container. Continue until all zucchinis are spiralized (I used about 2-3 zucchinis for this recipe to feed a family of 3).
- Next, dry off the Zoodles with a paper towel. (Drying the Zoodles helps decrease the amount of liquid that will be transferred to your saute pan).
- Finally, when you’re ready to cook the Zoodles, use the same pan you cooked the chicken sausage in. Heat a saute pan over medium-high heat. Add 1 tbsp. Olive Oil, pepper, and Trader Joe’s Green Goddess Seasoning and the Zoodles. Saute for 3-5 minutes or until your desired crispiness.

Putting it All Together
- Once the chicken sausage and Zoodles are cooked, it’s time to plate!
- Start by placing the Zoodles onto your plate or bowl.
- Then, place the chicken sausage on top of the Zoodles.
- You can eat it as is or add your favorite YellowBird Hot Sauce over the to add an extra punch of flavor!
