Green Goddess Salmon with Zoodles Ingredients

- Salmon Filets (I used Salmon I bought from the Seafood Counter at the grocery store)
- Lemon, 1/2 juiced and half sliced
- Garlic Cloves, minced
- Olive Oil
- Pink Salt
- Black Pepper
- Trader Joe’s Green Goddess Seasoning
- Zucchinis (this makes approximately 3-5 cups of Zoodles)
- A Bunch of Asparagus, trimmed

The Zoodle-Making Process

- First, take out your spiralizer (this has literally become one of my favorite kitchen tools).
- Within the spiralizer (the 10-blade edition), insert the Spaghetti Noodle blade.
- Then, take one Zucchini, chop off both ends, and place it within the holder of the spiralizer. Carefully turn the handle of the spiralizer and watch all the magical spaghetti Zoodles exit into the container. Continue until all zucchinis are spiralized (I used about 2-3 zucchinis for this recipe to feed a family of 3).
- Next, dry off the Zoodles with a paper towel. (Drying the Zoodles helps decrease the amount of liquid that will be transferred to your saute pan).
- Finally, when you’re ready to cook the Zoodles, heat a saute pan over medium-high heat. Add 1 tbsp. Olive Oil, pepper, and Trader Joe’s Green Goddess Seasoning and the Zoodles. Saute for 3-5 minutes or until your desired crispiness.

Baking the Salmon
- First, preheat the oven to 400 degrees.
- Then, take your Salmon filets out of the refrigerator and pat them dry with a paper towel. Lay the filets on a cutting board with the skin side down (even if you get them at the Seafood Counter in your supermarket, you’ll still be able to tell what the skin side is).
- Next, season your Salmon filets with Pink Salt and Black Pepper.
- Then, in a small mixing bowl, mix 2 tbsp. Olive Oil, 1/2 juiced Lemon, 1 tbsp. Trader Joe’s Green Goddess Seasoning, and the minced garlic.
- For an extra Lemon kick, consider adding the zest of 1/2 of the juiced Lemon.
- Next, rub the seasoning mixture over each Salmon filet until all has been used.
- Then, take the slices of Lemon and place them over the Salmon filets.
- I only put one slice of Lemon per Salmon filet for my recipe, but feel free to add more if you like an extra kick of Lemon.
- Next, place the seasoned Salmon on a parchment-lined baking dish or sheet, and roast for 13-15 minutes.
- While the Salmon is roasting, saute the Asparagus by heating a pan over medium-high heat. Throw in the Asparagus and 1/2 tsp. Green Goddess Seasoning. Cook the Asparagus for approximately 5-10 minutes (depending on your level of preparedness).
- We personally like Asparagus which still has a good bite to it, so I typically will only cook the Asparagus for about 5-6 minutes.
Cook the Zoodles
- Then, cook your Zoodles (as stated in the Zoodle-making process).
- Next, when the timer goes off for your Salmon, take it out of the oven and place it on your stove to prepare for plating.

Plate the Meal
- Finally, plate your beautiful dish! Place the Zoodles on the plate, then take 1 Salmon filet and place it over the top of the Zoodles. Next, lay the Asparagus over the Zoodles and/or the Salmon. Repeat until all ingredients are plated.
- Dive in and enjoy!
- For an added punch of spice, add strands of Yellowbird’s Blue Agave Sriracha Sauce over the top of your Salmon.
