Chicken Primavera with Zoodles

Chicken Primavera with Zoodles is delicious and highly nutritious. Seasoned and sautéed chicken encompasses a bed of mixed vegetables and homemade Zoodles (Zucchini Noodles). This recipe can be made with various vegetables and proteins and will be a hit for all!

The Inspiration

I recently started the Optavia eating plan, and Lean & Green has become my favorite part of the day (silly, but if you’ve ventured on this journey…you can relate).

Because I LOVE cooking (and baking), I began searching for other Lean & Green recipes besides what was included in the Optavia app. Then, I discovered Stacey Hawkin’s Chicken Primavera recipe, and the picture in itself made me salivate. Which led me to make this tonight for my family.

There were some adaptations to Hawkins’ original recipe, and I’ve also included the method for making your own Zoodles if you own a spiralizer. If you don’t own a spiralizer, consider investing in one…over time it is far cheaper to make your own Zoodles or any vegetable noodle than it is to buy them frozen or from the store (trust me)!

Allergen Friendly

This recipe is full-proof and allergy-friendly! Fresh vegetables combined with sautéed chicken with a tbsp of Avocado Oil make for one delicious, healthy, and allergy-friendly meal.

The Ingredients

  • Zucchinis (this makes about 3-5 cups of Zoodles/Zucchini Noodles)
  • Chicken Breast (cut in half and pounded into a thin and flat shape)
  • Trader Joe’s Green Goddess Seasoning
  • Baby Tomatoes (or any tomato), seeded and chopped
  • Broccoli chopped (fresh is better, but frozen does work)
  • Mushrooms, chopped
  • Green Beans, chopped (again, fresh is better, but frozen does work)
  • Parsley (dried or fresh), chopped
  • Lemon, zested and juiced
  • Kettle & Fire Chicken Bone Broth
  • Unsalted Butter
  • Avocado Oil or Olive Oil

The Zoodle Process

Zoodle Directions

  1. First, take out your spiralizer (this has literally become one of my favorite kitchen tools).
  2. Within the spiralizer (the 10-blade edition), insert the Spaghetti Noodle blade.
  3. Then, take one Zucchini, chop off both ends, and place it within the holder of the spiralizer. Carefully turn the handle of the spiralizer and watch all the magical spaghetti Zoodles exit into the container. Continue until all zucchinis are spiralized (I used about 2-3 zucchinis for this recipe to feed a family of 3).
  4. Next, dry off the Zoodles with a paper towel. (Drying the Zoodles helps decrease the amount of liquid that will be transferred to your saute pan).
  5. Finally, when you’re ready to cook the Zoodles, heat a saute pan over medium-high heat. Add 1/2 tbsp. Unsalted Butter and 1/2 tbsp. Avocado or Olive Oil, salt, pepper, and the Zoodles. Saute for 3-5 minutes or until your desired crispiness.

Preparing the Chicken and Vegetables

  1. First, prepare the vegetables (minus the Zucchini) by chopping the Broccoli, Tomatoes, Mushrooms, and Green Beans into smaller or bite-sized pieces. Set these aside in prep bowls or on a cutting board.
  2. Then, take 3 chicken breasts (approximately 1.5 lbs) and cut them in half. Trim off any excess fat.
  3. Next, place each half of the chicken breast into a ziplock bag and tenderize (or beat with a mallet) until thin. Repeat until you’ve done this with all 6 halves.
  4. Season each of the chicken breast halves with Trader Joe’s Green Goddess Seasoning.
  5. Then, heat a saute pan over medium heat and cook the chicken for 3-4 minutes on each side (this will vary depending on how thin of a piece you create with the mallet).
  6. Once the chicken is cooked, take it out of the saute pan and set aside.
  7. Next, pour in 1/2 tbsp. of oil and 1 tbsp. Unsalted Butter into the same saute pan you used to cook the chicken.
  8. Then, pour in all of your chopped veggies (Broccoli, Mushrooms, Tomatoes, and Green Beans) and cook for 3-5 minutes. Season your veggies with Trader Joe’s seasoning or salt and pepper.
  9. Next, pour in 1/2 c. Chicken Bone Broth or Chicken Stock, the zest and juice of 1 lemon, and Parsley.
  10. Then, steam the veggies (place a lid on your saute pan to help speed up the process).
  11. Add the chicken breast back into the pan and simmer over low heat.

Prepare the Zoodles

  1. Next, cook your Zoodles (as per the instructions for the Zoodle process) until they’re to your liking (we like ours a little charred so it’s got a bit of a crunch).

Plate and Enjoy

  1. Finally, to serve, plate the Zoodles first, then spoon the vegetables and sauce over the top. Place the chicken over the top of the veggies and Zoodles, and dig in!
    • Again, you can vary this recipe with different vegetables and protein!

Notes
