The Back Story
For those of you who have been following this blog, you may already know that my husband is a hunter and we eat the meat that he processes. Teal Season for Ducks just ended, and we were blessed to come home with Duck Breasts to use in different recipes.

These Bacon-Wrapped Jalapeño Poppers with a Twist are his hand-crafted recipe, and now make the table for any weekend football watching and/or friend gathering.

For those of you who are not hunters and don’t have the luxury of Game Duck, you can find Duck Breasts at certain grocery stores, at local meat markets, or from online Meat Markets such as Wild Fork Foods.
The Ingredients
- Cream Cheese
- Fresh Jalapeños, sliced and seeds removed
- Thick-Sliced Bacon
- Duck Breasts, marinated and sliced in half
- Brown Sugar
Marinating the Duck Breast
- First, make the marinade for the Duck Breasts by combining the Soy Sauce, Brown Sugar, Salt, Pepper, and Worcestershire Sauce in a medium-sized bowl.
- Next, place the Duck Breasts into the marinade and cover the bowl with plastic wrap.
- Then, place the Duck in the refrigerator and allow it to marinate for 4-6 hours (you can do longer if you choose).
- After the Duck has marinated for at least 4 hours, prepare the Jalapeños.
Preparing the Jalapeños
- Then, cut the fresh Jalapeños in half. Next, core out the center of the Jalapeños by removing the seeds.
- Then, place the Jalapeños on a parchment-lined baking tray.

Filling the Jalapeños
- Next, spoon out about 1 tbsp. of Cream Cheese and fill each halved Jalapeño.
- Preheat the oven to 425 degrees.
- Then, remove the marinated Duck Breast and slice each breast in half.
- Carefully lay each slice of Duck Breast on the Cream Cheese filled Jalapeños.
- Next, take a slice of thick-cut Bacon and wrap it around each Jalapeño. Pull the Bacon tight around the pepper to ensure it doesn’t unravel in the oven.
- Finally, on top of each Bacon-Wrapped Jalapeño, add the brown sugar.

Bake the Poppers
- Once the oven is preheated, place the Jalapeño Poppers into the oven for 25-30 minutes. You want the Bacon to be crispy around the popper prior to pulling them out of the oven.
- Slide each Bacon-Wrapped Jalapeño Popper off of the baking sheet and place it onto a serving platter. You can choose to eat these poppers fresh out of the oven or let them cool a bit prior to diving in. Enjoy!

Notes
The Duck needs about 4-6 hours to marinate prior to cooking this recipe, however, it can marinate for longer to develop a richer flavor. Consider marinating the duck a day prior to making these poppers for a more flavorful appetizer.
