Homemade Toaster Pastries are easy to make with Sourdough Starter and tastier than store-bought ones. These pastries are made with lemon, Ricotta cheese, Sourdough Starter, and strawberry giving you a bite you won’t forget!


The Inspiration
Toaster Pastries take me back to the “good ‘ole days,” where I remember spending time with my cousins and having a special “treat.” My aunt would put these in the toaster, and when we heard the sound of the toaster popping up, we would run into the kitchen with excitement. If we were eating the old-school toaster pastries, we’d take turns icing ours with the packet of icing, and then we’d all dive in. These pastries were a childhood treat for me, and I wanted to create my own recipe that would create fond memories for my own child.

The recipe for the Homemade Toaster Pastries was inspired by Little Spoon Farm’s Homemade Sourdough Pop Tart recipe. For the recipe I crafted for today’s post, I replaced lemon with vinegar (partially because I did not have vinegar, but also because lemon and strawberry pair well together). I also added Ricotta Cheese to add an extra punch of flavor.

For the Strawberry filling, I used the leftover Strawberry Sauce from the Silky Strawberry Sourdough Cheesecake recipe. You can of course adapt the filling to fit your own taste buds by adding different jam flavors, Nutella, or crafting your own filling. Have fun, get your kids involved, and be creative with this one.
The Pastry Dough

The Ingredients
- Organic, All Purpose Flour
- Unsalted Butter
- Pink Salt
- Granulated Sugar
- Sourdough Starter Discard
- Lemon
- Ricotta Cheese
Creating the Toaster Pastry Dough
- In a mixing bowl, whisk the flour, sugar, and salt.
- Then, grate (or Microplane) the cold, Unsalted Butter (sometimes it helps to pop the butter in the freezer for 5-10 minutes to get it a little frozen).
- Next, use your hands to mix the butter into the dry ingredients until you create a large-crumb texture.
- Then, pour in the lemon juice, Ricotta Cheese, and Sourdough Starter Discard.
- Next, use your hands to form a cohesive ball.
- Tip: Lightly oil your hands with Avocado Oil to help prevent the dough from sticking to your hands. If the mixture is too dry, add a tsp. of cold water.





Wrap and Chill the Dough
- Wrap the dough in plastic wrap and chill the dough in the refrigerator for at least one hour (you can refrigerate it for up to 24 hours…this is where the range of time comes into play).
- After chilling the dough, take the dough out of the refrigerator and place it on a lightly floured surface.

Create the Toaster Pastries
- Preheat the oven to 350 degrees.
- Using a rolling pin, roll the Toaster Pastry dough out into a rectangular shape.
- I rolled the dough into a rectangular shape with round edges, then I cut the edges with a pizza cutter and then rolled it into the sharp-edge rectangle shape.
- Then, use a pizza cutter or a sharp knife, to cut the dough into 4 equally long, rectangular shapes.
- Next, use about 2 tbsp. of Strawberry filling per rectangular shape (try and place the filling in the lower-middle area, so it doesn’t squish out when you fold the dough over to create the toaster-pastry shape).
- Then, use a fork to press and seal the edges. Then use the fork to crimp the edges.
- I did this without using an egg wash because I have an egg allergy. If you do not have an egg allergy, you can for sure use an egg wash to help seal the edges of your dough and brush the top to create a golden color when baking.




Bake the Toaster Pastries and Glaze
- Place the Homemade Toaster Pastries onto a parchment-lined baking sheet and bake for 25-30 minutes (start with 25 minutes and then go up from there).
- Remove the toaster pastries from the oven and set them on a wire rack to completely cool.
- While the toaster pastries are cooling, make the Strawberry Glaze (see the recipe below).
- Once the Toaster Pastries are cooled, glaze the top to your icing preference.
- This is a fantastic step to involve your child in. You can set up a station for them with a toaster pastry, icing, and a fork or spoon. Let them ice their own toaster pastry and then enjoy!
- Finally, once the Toaster Pastries are iced, dive in, and enjoy!

- Powdered Sugar
- Mexican Vanilla
- Oat Milk
- Strawberry Sauce
Mixing Up the Strawberry Glaze
- In a small mixing bowl, mix together all of the ingredients until your consistency preference.
- I like a thicker consistency as it sticks to the pastries a bit better.
- If the consistency becomes too thin, add more powdered sugar; if it becomes too thick, add more Strawberry Sauce or Oat Milk.
- Finally, once the Toaster Pastries have completely cooled, ice each one. Enjoy!

Notes
The minimal amount of time you want this dough to ferment or rest is about 30 minutes. However, the longer you allow the dough to ferment, the deeper the Sourdough flavor and reduction of gluten will become.
