Dehydrating a Sourdough Starter is a great way to preserve it for long-term storage or to share with others. Furthermore, in its dehydrated state, the natural yeast and beneficial bacteria are inactive, and can be reactivated when given the right conditions. Below, is a step-by-step guide on how to do it.

Materials Needed
- Active Sourdough Starter
- Parchment Paper or Silicone Baking Mat
- Spatula
- Clean, Dry Area (Counter)
- Airtight Container or Ziplock Bag


Step-by-Step Instructions
- First, start with a healthy and active Sourdough Starter.
- Next, feed the Starter as you normally would and let it reach its peak activity.
- Note: Peak activity looks like tons of fermentation bubbles on the top and sides of the Starter. If you’re using a plastic container or bowl, you can also lightly tap the sides of the bowl of Starter. If the starter cones into the container and pulls away from the sides, it’s at its peak!
- Then, prepare it for dehydration by lining a baking sheet with parchment paper or a silicone baking mat.
- Next, our a thin layer of the active Sourdough Starter onto the lined baking sheet(s). Use a spatula to spread it as thinly and evenly as possible.
- Note: The thinner the layer, the faster it will dry.
- Finally, dry the Starter by placing the tray in a warm, dry spot away from direct sunlight.
- Note: Air drying can take anywhere from 24-96 hours or one to four days.



Check for Doneness and Storage
- You’ll know the Starter is done when it’s completely dry and brittle.
- Next, it should easily snap into pieces when it’s “done.”
- Then, once it’s fully dried, break the dehydrated Starter into smaller pieces.
- Note: You can also crush it into smaller bits or grind it into a powder, if you prefer.
- Finally, place the dried pieces in an airtight container, such as a glass jar or ziplock bags. Store in a cool, dark place, or in the freezer for extended storage.
