- Organic Chicken Breasts

- Stir Fry Vegetables

- Coconut Aminos
- Rice Vinegar
- Cauliflower or Jasmine Rice

Crafting the Cashew Chicken
- First, in a large skillet, heat the olive oil over medium heat.
- Next, add the diced chicken to the preheated skillet and season with salt, pepper, garlic, and ginger. Stir to combine.
- Then, cook the chicken for 15 minutes, or until cooked through.
- While the chicken is cooking, add the cornstarch. Finish cooking the chicken with the cornstarch – this will help eliminate lumps in the sauce.
- Next, whisk together the coconut aminos and rice vinegar. Add it to the cornstarch chicken.
- Then, add the stir-fried vegetables and cashews.
- Next, bring it to a boil, and then reduce it to a simmer for 5 minutes.
- Finally, the Cashew Chicken is ready to serve!
Add the Olive Oil and Diced Chicken Into a Preheated Skillet

Season with Salt, Pepper, Ginger, and Garlic; Cook for 15 Minutes

- While the chicken is cooking, combine the cornstarch, coconut aminos, and rice vinegar. Whisk to combine.
- Then, add the sauce to the chicken, and add the stir-fried vegetables and cashews. (Note: I used frozen Costco stir-fried vegetables for this recipe. However, if you use fresh, you'll want to cook these prior to adding them to the chicken and sauce).
- Next, bring it to a boil, and then reduce it to a simmer for 5 minutes.
- Finally, the Cashew Chicken is ready to serve!
