Crafting the Cashew Chicken

  1. First, in a large skillet, heat the olive oil over medium heat.
  2. Next, add the diced chicken to the preheated skillet and season with salt, pepper, garlic, and ginger. Stir to combine.
  3. Then, cook the chicken for 15 minutes, or until cooked through.
  4. While the chicken is cooking, add the cornstarch. Finish cooking the chicken with the cornstarch – this will help eliminate lumps in the sauce.
  5. Next, whisk together the coconut aminos and rice vinegar. Add it to the cornstarch chicken.
  6. Then, add the stir-fried vegetables and cashews.
  7. Next, bring it to a boil, and then reduce it to a simmer for 5 minutes.
  8. Finally, the Cashew Chicken is ready to serve!

Serving and Storing the Cashew Chicken

Once the dish is ready, serve it on top of roasted Cauliflower or steamed Jasmine Rice.

  • 1 lb. Organic Chicken Breasts, Diced
  • Salt and Pepper to Taste
  • 1 tsp. Garlic Powder
  • 1 tsp. Ginger Powder or Fresh Ginger
  • 2 tsp. Olive Oil
  • 2 c. Stir Fry Vegetables
  • 1 c. Cashews
  • 1 tbsp. Cornstarch
  • 3/4 c. Coconut Aminos
  • 1 tbsp. Rice Vinegar
  • 1 c. Cauliflower or Jasmine Rice

Instructions

Creating the Cashew Chicken

  1. First, in a large skillet, heat the olive oil over medium heat.
  2. Next, add the diced chicken to the preheated skillet and season with salt, pepper, garlic, and ginger. Stir to combine.
  3. Then, cook the chicken for 10-12 minutes, or until cooked through.
  4. While the chicken is cooking, combine the cornstarch, coconut aminos, and rice vinegar. Whisk to combine.
  5. Then, add the sauce to the chicken, and add the stir-fried vegetables and cashews. (Note: I used frozen Costco stir-fried vegetables for this recipe. However, if you use fresh, you'll want to cook these prior to adding them to the chicken and sauce).
  6. Next, bring it to a boil, and then reduce it to a simmer for 5 minutes.
  7. Finally, the Cashew Chicken is ready to serve!

Saving and Storing the Cashew Chicken

Once the dish is ready, serve it on top of roasted Cauliflower or steamed Jasmine Rice.
