- Cauliflower or Gluten-Free Gnocchi

- PuraVida Vegetable Melange
- Costco Pesto or Homemade Pesto
- Salt and Pepper
- Shredded Mozzarella Cheese or Dairy Free Shredded Cheese

Creating the Pesto Gnocchi with Shrimp and Vegetables
- First, in a large nonstick, All-Clad skillet, add one teaspoon of olive or avocado oil. Bring to medium heat. Add the vegetable medley and cook for 5 minutes, or until thawed.
- Next, add the peeled and deveined shrimp. Cook for 3-4 minutes.
- Then, toss in the gnocchi and pour in the pesto. Stir to combine.
- Next, cook the mixture for 3-5 minutes, or until the shrimp and gnocchi are fully cooked.
- Then, turn off the heat and sprinkle in the cheese (if desired). Stir to combine. Season with salt and pepper.
- Finally, ladle 1 cup of the Pesto Gnocchi with Shrimp and Vegetables onto a serving plate or bowl; serve immediately!
