Creating the Simple Syrup
- First, in an All-Clad pot, combine the water and Agave over medium heat.

Garnishing the Serving Glasses and Serving the Mocktail
- While the mocktail mixture is chilling, cut a lime into slices and rub each slice around the lip of the serving glass.
- Next, pour the Tajin onto a small plate.
- Then, dip the lime-rubbed rims of the glasses into the Tajin.
- Next, fill each of the serving glasses with ice.
- Note: I used our Nugget ice, but you can use regular freezer ice, a cocktail cube of ice, or whatever you have on hand.
- Finally, pour the chilled Dragon Fruit Margarita Mocktail over the ice, and enjoy!

Storing the Dragon Fruit Margarita Mocktail
If you have leftover Dragon Fruit Margarita Mocktails, or you are making this a day in advance, it can be stored in the refrigerator and the serving pitcher for up to 3 days. (I would recommend not adding the Topo Chico until you are ready to serve the mocktail, though).
