The Sourdough Ube Loaf is a delightful fusion of two distinct culinary traditions: Sourdough bread-making and Filipino cuisine. Ube, also known as purple yam, is a vibrant purple tuber widely used in Filipino desserts for its subtly sweet flavor and captivating hue.

Finally, the combination results in a visually stunning and flavorful bread that is both aromatic and delicious.

Crafting the Sourdough Ube Loaf Dough

  1. First, in a Bosch Universal Mixer, combine all of the ingredients.
  2. Next, turn the mixer on a speed 2 and then increase it to 3 once the dough pulls together.
  3. Then, once the dough begins to pull away from the sides of the mixing bowl, turn the mixer off.
  4. Finally, the Sourdough Ube Loaf dough is ready!

Combine All Ingredients in a Bosch Universal Mixer

First, in a Bosch Universal Mixer, combine all of the ingredients.

Next, turn the mixer on a speed 2 and then increase it to 3 once the dough pulls together. Then, once the dough begins to pull away from the sides of the mixing bowl, turn the mixer off.

Finally, the Sourdough Ube Loaf dough is ready!

Stretching, Folding, and the Bulk Rise

  1. First, place the Sourdough Ube Loaf dough into a Banneton Bowl or a lightly oiled ceramic or glass bowl. Allow the dough to rest for one hour. Cover the dough with a kitchen towel.
  2. After one hour of resting, remove the dough from the bowl, and press it into a rectangular shape.
  3. Then, fold the sides of the dough into the middle and then form the dough into a ball.
  4. Next, place the reformed ball of dough into the Banneton Bowl, and let it rise for another hour.
  5. Then, repeat steps 2-4 until the 3rd hour.
  6. Next, ensure the loaf of bread dough is covered with a kitchen towel, and let it bulk rise (12+ hours of rising time).
    • Note: I typically do bulk rises overnight so I don’t become impatient about waiting to bake the dough.

After one hour of resting, remove the dough from the bowl, and press it into a rectangular shape. Then, fold the sides of the dough into the middle and then form the dough into a ball. Next, place the reformed ball of dough into the Banneton Bowl, and let it rise for another hour. Then, repeat steps 2-4 until the 3rd hour.

Next, ensure the loaf of bread dough is covered with a kitchen towel, and let it bulk rise (12+ hours of rising time).

Scoring the Sourdough Ube Loaf

  1. First, preheat the oven to 450 degrees Fahrenheit. Place a Dutch Oven or Bread Oven into the cold oven and allow it to preheat along with the oven.
  2. Next, rip off a sheet of parchment paper and lightly dust it with flour.
  3. Then, remove the Sourdough Ube Loaf dough from the glass or ceramic bowl, and place it on the parchment paper.
  4. Next, lightly dust the top of the loaf with flour.
  5. Finally, using a bread lame, score the bread in the design of your choice.

First, preheat the oven to 450 degrees Fahrenheit. Place a Dutch Oven or Bread Oven into the cold oven and allow it to preheat along with the oven. Next, rip off a sheet of parchment paper and lightly dust it with flour.

Then, remove the Sourdough Ube Loaf dough from the glass or ceramic bowl, and place it on the parchment paper. Next, lightly dust the top of the loaf with flour.

Score Using a Bread Lame

Finally, using a bread lame, score the bread in the design of your choice.

Baking and Serving the Sourdough Ube Loaf

  1. First, once the oven has preheated, turn the oven temperature down to 435 degrees Fahrenheit.
  2. Next, remove the Dutch Oven or Bread Oven from the heated oven and remove the lid.
  3. Then, carefully place the Sourdough Ube Loaf on the parchment paper into the Dutch or Bread Oven. Replace the lid.
  4. Next, bake the Sourdough Ube Loaf, with the lid on, for 20 minutes.
  5. Then, remove the lid and bake for an additional 18-20 minutes.
  6. Next, remove the baked bread from the oven and place it onto a wire rack to let it cool for about 20 minutes.
  7. Finally, the Sourdough Ube Loaf is ready to be enjoyed with honey, goat cheese, whipped butter, and more! Enjoy!

Storing the Sourdough Ube Loaf

If you are looking to store Sourdough Ube bread, I’d recommend slicing the entire loaf. Then, place these slices of bread into freezable bags. When you’re ready to toast a slice, simply remove it from the bag, toss it in the toaster, and enjoy! (Note: Frozen Sourdough Ube bread will keep fresh, in the freezer, for up to 2 months).

    This looks like a great recipe. I want to point out that ube is made with purple yam and not purple sweet potato no matter how much that powder says it’s the same.
