Crafting the Hawaiian Sourdough Bread Dough

  1. First, in a Bosch Universal Mixer, combine all of the ingredients.
  2. Next, turn the mixer on to speed 2 and slowly incorporate the ingredients. As the ingredients mix, slowly increase the speed.
  3. Then, once the dough pulls away from the edges of the mixing bowl, turn the mixer off.
  4. Next, split the dough in half and form one half into a ball.
  5. Then, place the ball of dough into a lightly floured Banneton or ceramic bowl.
  6. Next, repeat steps 4-5 with the other half of the dough.
  7. Then, after the dough has risen for an hour, pull the edges of the dough out and reform it.
    • Note: You’ll do this stretch method for the first 3 hours. This will help activate the Sourdough Starter more and create a more tender and light bread.
  8. Finally, cover the bowls of dough and let them rise until they have doubled in size.

Next, split the dough in half and form one half into a ball. Then, place the ball of dough into a lightly floured Banneton or ceramic bowl. Next, repeat steps 4-5 with the other half of the dough. Finally, cover the bowls of dough and let them rise until they have doubled in size.

The Second Rise

  1. Once the dough has risen and doubled in size, punch the dough down and reform it into a ball.
  2. Next, place one of the loaves into a lightly-greased, large loaf pan. Cover the loaf pan with a tea towel, and let it rise for another 4 hours.
  3. Then, place the other loaf onto a sheet of parchment paper and lightly dust it with flour.
  4. Finally, allow the loaf on the sheet of parchment paper to rest for 30 minutes prior to scoring it.

Once the dough has risen and doubled in size, punch the dough down and reform it into a ball. Next, place one of the loaves into a lightly-greased, large loaf pan. Cover the loaf pan with a tea towel, and let it rise for another 4 hours.

Then, place the other loaf onto a sheet of parchment paper and lightly dust it with flour. Finally, allow the loaf on the sheet of parchment paper to rest for 30 minutes prior to scoring it.

  1. First, preheat the oven to 500 degrees Fahrenheit, and place a Dutch Oven inside of it. Preheat the Dutch Oven as the oven is preheating.
    • Note: You will bake the Hawaiian Sourdough Bread in the Dutch Oven first, as it doesn’t need to rise for hours on the second rise.
  2. Then, score the round of Hawaiian Sourdough Bread loaf with a Bread Lame.
  3. Next, once the oven is preheated, remove the Dutch Oven, remove the lid, place the Dutch Oven loaf of Hawaiian Sourdough Bread inside, and replace the lid.
  4. Then, lower the oven temperature to 435 degrees Fahrenheit, and bake the bread, with the lid on, for 20 minutes.
  5. Next, remove the lid of the Dutch Oven, and bake the bread for an additional 18-20 minutes.
  6. Finally, remove the baked bread from the oven and immediately place it onto a wire, cooling rack. Allow it to cool completely prior to slicing into it! Enjoy!
