Sourdough Breadsticks Ingredients
- Sourdough Discard
- Warm Water
- Texas Olive Oil
- King Arthur Organic, All-Purpose Flour
- Cornmeal
- Sea Salt
- Toppings of Your Choice – herbs, seeds, peppercorns, dried seasonings, seasoned Olive Oil, etc.
Crafting and Rising the Sourdough Breadstick Dough
- First, in a Bosch Universal Mixer, combine all of the ingredients, except the toppings.
- Next, turn the mixer on a speed of 2 or 3, and mix the dough until it begins to pull away from the side of the bowl.
- Then, turn the mixer off.
- Finally, place the ball of Sourdough Breadstick dough into a Banneton Bowl, cover it with a tea towel, and let it rest and rise for 4 to 24 hours, or until doubled in size.

- First, after the dough has risen, divide the Sourdough Breadstick dough into two, using a Bench Scraper or a sharp knife.
- Next, shape each portion into a rectangle by using your fingers.
- Note: This method helps to create air pockets in your dough which makes the breadsticks more tender.
- Then, cover the dough with a kitchen towel, and let it rest for about 15 minutes.
- Next, using a rolling pin or your hands, roll or pat out the dough into a larger rectangle.
- Then, brush each rectangle with cold water or seasoned olive oil.
- Next, sprinkle each rectangle with the toppings of your choice (optional).
- Finally, cover each rectangle with plastic wrap and lightly press the toppings into the dough (optional).
- Note: This will help the toppings stick to the dough.

- Next, when the oven is hot, place Sourdough Breadsticks either on the preheated skillet, stone, or baking sheet into the oven.
- Then, bake the breadsticks for 10-12 minutes, or until they are golden brown.
- Next, remove the breadsticks and place them onto a wire, cooling rack.
- Then, repeat steps 2-4 with the remaining breadsticks.
- Finally, allow the Sourdough Breadsticks to cool to room temperature, serve, and enjoy!


Storing the Sourdough Breadsticks
