Making the Chimichurri Sauce

  1. First, in a Ninja or high-power blender, blend the cilantro, parsley, lime juice, 1/2 c. olive oil, garlic, salt, and chipotle chili powder until smooth.
  2. Next, pour the Chimichurri sauce into a small, glass mixing bowl or mixing cup.
  3. Finally, place the sauce in the refrigerator until you are ready to serve the dish.

First, in a Ninja or high-power blender, blend the cilantro, parsley, lime juice, 1/2 c. olive oil, garlic, salt, and chipotle chili powder until smooth.

  2. Next, place the peeled and deveined shrimp into the heated oil and saute for about 5 total minutes.
  3. Then, when the shrimp are cooked through, remove them from the skillet and turn the heat off.
  4. Next, gently toss 1/2 of the Chimichurri with the cooked shrimp.
  5. Finally, serve over cauliflower rice, Zoodles, salad greens, roasted vegetables, or inside Plantain Tortillas, and enjoy!
