Citrus and Herb Roasted Chicken Ingredients
- Organic, Whole Chicken, Brined Using Citrus Herb Brine for Chicken
- Orange Slices
- Meyer Lemon Slices
- Bundle of Thyme, Sage, and Rosemary
- Organic Rainbow Carrots
- Turnips
- White Onion
- Garlic
- Olive Oil
- Pepper to Taste
- Trader Joe’s Green Goddess Seasoning
Prepare the Vegetables
- First, on a cutting board, lay out the onion, garlic, carrots, and turnips.
- Next, using a peeler, peel the skin off the carrots and turnips and set aside.
- Then, for the carrots, cut the carrots down the middle, and then chunk them into 2-inch slices.
- Next, for the turnips, cut the turnips into 2-inch chunks.
- Then, peel the onion and chunk it into large chunks.
- Next, smash the cloves of garlic and set aside.
- Finally, place the vegetables in the bottom of the roasting pan, and toss them with olive oil, salt, and pepper.

Roasting the Citrus and Herb Chicken
- First, preheat the oven to 425 degrees Fahrenheit.
- Next, remove the Citrus Herb Brined Chicken from the brining liquid and place it on a large cutting board.
- Then, using paper towels, dry off the chicken and throw out the brining liquid.
- Next, generously drizzle olive oil over the chicken and season with Trader Joe’s Green Goddess Seasoning and pepper.
- Then, place the sliced citrus, bundle of fresh herbs, and salt and pepper in the cavity of the chicken.
- Next, place the chicken on top of the vegetables.
- Then, roast the Citrus and Herb Chicken for 60 minutes, or until the skin is brown and crispy and the internal temperature reaches 165 degrees Fahrenheit.
- Finally, allow the Citrus and Herb Chicken to rest on a cutting board for 10 to 15 minutes prior to serving. Plate the roasted vegetables alongside this delicious chicken for a well-rounded and healthy meal.
