Citrus and Herb Roasted Chicken Ingredients

Prepare the Vegetables

  1. First, on a cutting board, lay out the onion, garlic, carrots, and turnips.
  2. Next, using a peeler, peel the skin off the carrots and turnips and set aside.
  3. Then, for the carrots, cut the carrots down the middle, and then chunk them into 2-inch slices.
  4. Next, for the turnips, cut the turnips into 2-inch chunks.
  5. Then, peel the onion and chunk it into large chunks.
  6. Next, smash the cloves of garlic and set aside.
  7. Finally, place the vegetables in the bottom of the roasting pan, and toss them with olive oil, salt, and pepper.

  1. First, preheat the oven to 425 degrees Fahrenheit.

  3. Then, using paper towels, dry off the chicken and throw out the brining liquid.
  4. Next, generously drizzle olive oil over the chicken and season with Trader Joe’s Green Goddess Seasoning and pepper.
  5. Then, place the sliced citrus, bundle of fresh herbs, and salt and pepper in the cavity of the chicken.
  6. Next, place the chicken on top of the vegetables.
  7. Then, roast the Citrus and Herb Chicken for 60 minutes, or until the skin is brown and crispy and the internal temperature reaches 165 degrees Fahrenheit.
  8. Finally, allow the Citrus and Herb Chicken to rest on a cutting board for 10 to 15 minutes prior to serving. Plate the roasted vegetables alongside this delicious chicken for a well-rounded and healthy meal.
