Finally, these pastries are “fried” in an air fryer which gives the exterior that deep-fried texture without the heavy feeling in your stomach afterward.

Furthermore, instead of dairy milk, Oat Milk is used. Oat Milk has a thicker consistency than Almond Milk which makes it the better non-dairy milk substitute for baking.

Finally, Active Sourdough Starter is incorporated into the dough which helps reduce the gluten content. The longer you allow the dough to ferment and rise, the more reduced the gluten will be. The recipe itself calls for a minimum of 6 hours of rising time, however, you can let the dough rise for up to 24 hours.

To glaze the donuts, you’ll place one side of the donut into the glaze, and then carefully lift it out. Then set it on the non-glazed side to set before enjoying.

Making the Chocolate Chip Glaze

  1. First, sift the powdered sugar and cocoa powder into a mixing bowl.
  2. Next, add the Oat Milk, Mexican Vanilla, and crushed Mini Chocolate Chips to the dry ingredients.
  3. Then, using a whisk or fork, thoroughly mix until there are no lumps and the glaze is smooth.
  4. Finally, set the glaze aside until after the donuts have cooled slightly.

Making the Sourdough Donut Dough

  1. First, in a Bosch Universal Mixer, pour all of the ingredients into the mixing bowl.
  2. Next, place the lids onto the mixer and turn it on to speed 3.
  3. Then, allow the ingredients to mix until the dough begins to pull away from the sides of the bowl.
    • If your dough is not pulling away from the sides of the bowl, add 1 tbsp. of flour at a time. This will help the dough form. Similarly, if the dough is too dry, add 1 tbsp. more of Oat Milk at a time.
  4. Next, turn off the mixer and take out the dough.
  5. Then, form the dough into a ball. Place the dough into a Banneton Bowl and cover it with a tea towel.
  6. Finally, allow the dough to rise for a minimum of 6 hours prior to baking the donuts.

  1. First, lightly flour a surface and a ball of donut dough.
  2. Using a rolling pin, roll out the dough until about 1 to 1 1/2 inches thick.
  3. Next, using a donut cutter, cut out rounds from the dough. Then, cut the rounds with the donut hole cutter (if desired). Re-form the ball, re-roll, and cut until all of the dough is used.
  4. Then, place the donuts on a parchment-lined or nonstick baking sheet.
  5. Next, lightly coat an air fryer basket with Avocado Oil.
  6. Then, place 3 to 4 donuts in a single layer in the air fryer (the donuts should not be touching). Close the air fryer and set it to 350 degrees Fahrenheit.
  7. Next, cook the donuts for 5-6 minutes in total, flipping halfway through until the donuts are golden brown. Repeat steps 6 and 7 until all the donuts have been cooked.
    • To cook the donut holes, “fry” them for 3 minutes total.
  8. Finally, transfer the donuts back to the baking sheet and allow them to cool.

  • 1/2 tsp. Ground Cinnamon
  • 1/4 c. Active Sourdough Starter

  • 3/4 c. Unsweetened Applesauce
  • 1 1/3 c. Oat Milk
  • 1/2 c. Unsalted Butter, Melted
