Strawberry Filled Doughnuts are a twist on a New Orleans’ Mardi Gras favorite – Berry Filled Doughnuts. These doughnuts are made with Active Sourdough Starter to create a tender, flaky, and pillowy-soft texture.

Furthermore, the interior of these doughnuts is filled with sweet and tart homemade Strawberry jam and dusted with Cinnamon Sugar. Finally, these pastries are baked in the oven instead of fried which creates a soft and crunchy exterior – a perfect bite all around.

Hypoallergenic
Strawberry Filled Doughnuts contain allergen-friendly ingredients. Most doughnuts contain dairy milk and eggs which makes it difficult for those with egg and dairy allergies to enjoy them.
Therefore, this recipe substitutes eggs for Unsweetened Applesauce. Unsweetened Applesauce has a similar consistency to eggs which makes it an easy substitution. Furthermore, instead of dairy milk, Oat Milk is used. Oat Milk has a thicker consistency than Almond Milk which makes it the better non-dairy milk substitute for baking.

Finally, Active Sourdough Starter is incorporated into the dough which helps reduce the gluten content. The longer you allow the dough to ferment and rise, the more reduced the gluten will be. The recipe itself calls for a minimum of 6 hours of rising time, however, you can let the dough rise for up to 24 hours.

Strawberry Filled Doughnuts Ingredients
- Organic, All Purpose Flour
- Coconut Sugar
- Ground Cinnamon
- Active Sourdough Starter
- Pink Salt
- Unsweetened Applesauce
- Oat Milk
- Unsalted Butter, Melted
- Homemade Strawberry Jam
The Cinnamon Sugar Mixture
- Granulated or Coconut Sugar
- Ground Cinnamon
- In a medium-sized mixing bowl, mix together the ingredients.
- Place the bowl off to the side (you will use this after the doughnuts have baked and slightly cooled).

Making the Doughnut Dough
- First, in a Bosch Universal Mixer, pour all of the ingredients (except the Strawberry Jam) into the mixing bowl.
- Next, place the lids onto the mixer and turn it on to speed 3.
- Then, allow the ingredients to mix until the dough begins to pull away from the sides of the bowl.
- If your dough is not pulling away from the sides of the bowl, add 1 tbsp. of flour at a time. This will help the dough form. Similarly, if the dough is too dry, add 1 tbsp. more of Oat Milk at a time.
- Next, turn off the mixer and take out the dough.
- Then, form the dough into a ball. Place the dough into a Banneton Bowl and cover it with a tea towel.
- Finally, allow the dough to rise for a minimum of 6 hours prior to baking the doughnuts.

Baking the Doughnuts
- First, preheat the oven to 350 degrees Fahrenheit.
- Next, lightly flour a surface and the ball of doughnut dough.
- Using a rolling pin, roll out the dough until about 1 to 1 1/2 inches thick.
- Then, using a doughnut cutter, cut out rounds from the dough. Re-form the ball, re-roll, and cut until all of the dough is used.
- Next, place the doughnuts on a parchment-lined or nonstick baking sheet.
- Then, bake for 20 to 25 minutes or until lightly golden.
- Next, remove the baked doughnuts from the oven and cool for 5 minutes on the baking sheet prior to transferring them to a wire rack.
- Finally, once the doughnuts have cooled slightly, roll them through the Cinnamon Sugar mixture and place them back on the wire rack.

- First, poke a hole into each side of the doughnut using the tip of a piping bag or a sharp knife.
- Using a piping bag or a Ziploc bag, fill it with Strawberry Jam.
- Next, carefully place the bag into the hole of the doughnuts and fill it with Strawberry Jam. You want to fill the doughnuts enough to fill the hole but do not overfill it.
- Then, place the Strawberry Filled Doughnuts on a serving platter and enjoy!
