Duck Empanadas are rich, savory, and the perfect appetizer or dinner for any day of the week. These empanadas are made using Game Meat, specifically Teal Duck, and marinated to develop a savory and sweet flavor profile. Finally, the marinated Duck is baked, shredded, and mixed with cream cheese, chives, and bacon to create a flavor you won’t want to miss out on.


Teal Duck Marinade
The Marinade Ingredients

Mixing Up the Marinade
- First, pour all of the ingredients into a large measuring cup or bowl.
- Next, using a whisk or fork, stir to combine all of the ingredients.
- Then, drop in 6-8 Teal Duck Breasts into the marinade.
- Next, cover the Duck Breasts and place them in the refrigerator for at least 6 hours.

Cooking and Shredding the Duck Breast
- After the Duck Breasts have been marinating for at least 6 hours, preheat the oven to 350 degrees.
- Then, take the Teal Duck out of the marinade and place it into a baking pan.
- Next, once the oven is preheated, bake the Duck for 10-15 minutes or until the internal temperature reaches 130 degrees.
- Then, remove the Duck from the oven, and let it cool for 2-3 minutes.
- Finally, shred the meat using two forks and set aside in a bowl.

Duck Empanada Ingredients
- Shredded Duck Breasts
- Bacon
- Cream Cheese
- Cheese
- Chives
- Salt and Pepper
- Unsalted Butter
- A Batch of Vegan Empanada Dough

Making the Duck Empanada Filling
- First, in a medium-sized mixing bowl, pour in the ingredients (except for the empanada dough).
- Next, using a silicone spatula, mix together the Duck filling until well combined.
- Finally, place the bowl to the side until you’re ready to fill the Empanada discs.

Filling the Empanada Dough
- After the Vegan Empanada Dough has rested and risen (for at least 8 hours), lightly flour a surface.
- Using a rolling pin, roll the dough out to about 1 inch of thickness.
- Next, using a 3 to 4-inch round cutter, cut the dough into discs. Reroll the dough and repeat steps 2 and 3 until all of the dough has been used.
- Next, fill a small mixing bowl with cold water.
- Then, take 1 tbsp. of the Duck filling in the center of the Empanada dough disc.
- Then, take your pointer finger and dip it into the cold water. Trace your wet finger around the edges of the dough.
- Next, fold the dough over the top of the filling, and then using your wet finger, press to seal the dough.
- Then, crimp the edges by pressing a fork around the edges of the dough to seal it, or pull the dough outward and then press it inward. Repeat steps 5-8 until all Empanada discs have been filled, sealed, and crimped.

Baking the Duck Empanadas
- First, preheat the oven to 450 degrees Fahrenheit.
- Next, place the unbaked Duck Empanadas on nonstick baking sheets.
- Then, using a pastry brush, paint the tops and edges with melted butter. This will help them develop that golden brown crust while baking.
- Once the oven is preheated, pop the Empanadas in the oven and bake for 10-15 minutes.
- Then, place the Duck Empanadas on a wire rack to cool slightly prior to eating.
- Finally, serve them warm or at room temperature, and enjoy!

Serving and Storing the Empanadas
Duck Empanadas can be served as a grab-and-go dinner or appetizer. These also make amazing party foods and are highly versatile in terms of substituting different Game Meats for the Duck.
As with most baked goods, these empanadas are best if eaten the same day as you baked them. However, if you happen to have leftovers, you can store them in an airtight container and in the refrigerator for up to 3 days.

Notes
These empanadas take a little longer to make due to marinating the Duck breasts. Consider starting the marinade the day before for a quicker process.
