Ground Elk Chili

Ground Elk Chili is simple to make, bursting with flavor, and packed with protein. With three types of ground Game Meat, beans, and fire-roasted tomatoes, this will be a chili that will bring comfort and warmth to all.

Drumroll please…this meal is FREE of all top 9 allergens! There are no eggs, milk, nuts, fish, crustaceans, shellfish, wheat, soy, or sesame in this recipe. Because ground Game Meat is lean meat, this meal is also decently healthy (depending on how you serve it of course).

Where to Buy Ground Elk

Game Meats used in Ground Elk Chili include Ground Venison (processed by my husband), Ground Elk from Wild Fork Foods, and Ground Bison from Costco.

You may be wondering, where you may find Ground Elk or any kind of ground Game Meat (if you are not a hunter for that specific animal). Game Meat is typically any meat from any land animal that is hunted for food. This includes – Bear, Bison, Antelope, Caribou, Deer, Elk, Moose, Reindeer, Wild Boar, Snake, Alligator, Rabbit, Squirrel, Beaver, Birds (Pheasant, Grouse, Quail, Wild Turkey, Wild Geese, and Ducks).

There are a few options when locating ground Ground Elk or other Game Meat.

  • Wild Fork Foods has become my new favorite place for lean and tasty Game Meat, including Ground Elk. This store is located in Wylie, Texas, and they ship all over! The meat is super tasty and flavorful on its own, and it is lean. This is a great meat to mix into your monthly meals that’s healthy for all.
  • Force of Nature is another store that typically is recommended to me as I’m browsing for Game Meat. This brand is found all over the United States and can typically be found in local grocery stores such as Kroger, Whole Foods, and Sprouts.
  • Fossil Farms is a brand I’ve found at Fresh by Brookshire’s grocery market and the butchers speak highly of it. I have yet to personally try this out because I have my stash from Wild Fork Foods in the freezer currently, but I will definitely try it out soon!

If you have family and friends who hunt specific Game Meat, and you can wager a deal for some fresh ground Game Meat, that is always a win too!

Ingredients

  • Olive Oil
  • Green Bell Pepper, Diced
  • White Onion, Diced
  • Garlic Cloves, Minced
  • Ground Venison
  • Ground Elk
  • Ground Bison
  • Chili Powder (depending on the level of spice)
  • Cumin
  • Orange Juice
  • Paprika (Smoked Paprika also works for an extra punch of flavor)
  • Ground Cinnamon
  • Salt
  • Worcestershire Sauce
  • Black Pepper
  • Tomato Paste
  • Beef Stock (or Beef Bone Broth)
  • Can of Fire-Roasted Tomatoes, Drained
  • Can of Kidney Beans, Drained and Rinsed
  • Can of Pinto Beans, Drained and Rinsed

Instructions

  1. First, in a large stock pot, heat the olive oil over medium heat.
  2. Next, add the diced onion, bell pepper, and minced garlic and saute until translucent (about 3-5 minutes).
  3. Then, add the ground Game Meats and break them up into small pieces. Allow the meat to brown slightly prior to adding the seasoning.
  4. Next, add the seasonings, Worcestershire Sauce, and Orange Juice into the pot and stir to combine.
  5. Then, add the beans, tomatoes, tomato paste, and Beef Stock or Bone Broth. Scrape the bottom of the pan to combine all the flavors and bring any browned bits into the mix.
  6. Bring the chili to a boil, then reduce the heat to a simmer. Partially cover the pot with the lid and allow the chili to simmer for at least 30 minutes (the longer the better).
  7. Finally, ladle generous portions over Fritos, Bow-Tie Pasta, Baked Potatoes, Sourdough Cornbread, and more! Enjoy!

Creating the Mirepoix

First, in a large stock pot, heat the olive oil over medium heat. Next, add the onions, bell pepper, and garlic and saute until translucent.

Add the Game Meats

3 lbs of Game Meat
Then, add the 3 lbs of Game MeatGround Elk, Ground Venison, and Ground Bison. Break up the meat and allow it to brown slightly before adding the seasoning.

Add the Seasoning

Next, add the seasoning to the browning Game Meat. Allow it to cook until fully browned.

Add the Beans

Next, add the Kidney and Pinto Beans.

Time for the Tomatoes

Then, add the Fire Roasted Tomatoes.
Then, add the tomato paste and Beef Stock (or Bone Broth). Bring the chili to a boil and allow it to simmer for 30+ minutes prior to serving.

Stir the Chili and Let it Simmer

Finally, the Ground Elk Chili is ready to be served!

Ways to Serve Ground Elk Chili

We typically serve our chili over Fritos or Baked Potatoes, and pile a hunk of cheese on top!
Our neighbors informed us they serve their chili over Bow-Tie Pasta (or another shape works too). This is a super fun way to serve Ground Elk Chili for kids, too!

  • 1 Green Bell Pepper, Diced

Notes

This Ground Elk Chili is packed with 3 types of Game Meat. However, if you are not a fan of Game Meat or cannot find it, you can always substitute these meats for Ground Turkey or Lean Ground Beef.
