The Inspiration
Recently we were invited to one of our friend’s homes for Sunday dinner. As we sat down to dinner, we participated in a Sunday tradition of theirs – “Tell something that was great about your day.” As we all shared what we were grateful for, the conversation opened up to other traditions that our families both participate in.

Another tradition our friends practice, especially during the season of Christmas, is the lighting of the Advent Candles. For those who may be unfamiliar with Advent Candles, there are four candles leading up to Christmas to mark the four weeks of Advent. Each of these candles is lit on a Sunday.

Along with the lighting of the Advent Candles, our friends put together a sweet treat to unite their children to this beautiful tradition. Their sweet treat consisted of a specialty Hot Cocoa flavor and a Shortbread Mug Cookie. These Shortbread Mug Cookies inspired the Gingerbread Mug Cookies for today’s blog post and recipe.

Allergy-Friendly Baking
As with many cookie recipes, eggs are the binder for butter, flour, and spices. However, with food allergies, specifically an egg allergy, adjustments had to be made. Thus, the eggs in the original recipe were substituted for Unsweetened Applesauce. Applesauce has a similar consistency as eggs with a little bit of an acidic, sweet note which perfectly balances the sugar and spice in this cookie recipe.

Gingerbread Mug Cookies Ingredients
- Unsalted Butter, Room Temperature
- Coconut Sugar
- Brown Sugar
- Blackstrap Molasses
- Pink Salt
- Baking Soda
- Ground Ginger
- Ground Cinnamon
- Unsweetened Applesauce
- Sourdough Starter
- Organic, All Purpose Flour

Baking Instructions
- In a Kitchen Aid Stand Mixer with a paddle attachment, cream the butter and sugars until light and fluffy.
- Next, add the Molasses, salt, baking powder, and spices. Mix until combined.
- Then add the applesauce and Sourdough Starter and mix until combined.
- Next, slowly add the flour and mix until the dough combines. (Be careful not to overmix).
- Then, form the dough into a ball and refrigerate for 30 minutes.
- Next, preheat the oven to 375 degrees Fahrenheit.
- Then, on a lightly-floured surface, roll the dough out to 3/4 inch thickness.
- Next, using the mug cookie cutters, cut out the Gingerbread Mug Cookies and place them on a parchment-lined baking sheet.
- Then, bake them in the preheated oven for 10-12 minutes.
- After removing the cookies from the oven, place them on a wire, cooling rack and allow them to cool completely to room temperature prior to icing and/or decorating.
- Finally, serve with a cup of your favorite hot, holiday beverage, and enjoy!
