Allergen Friendly

This recipe is ideal for my allergy-friendly pals! This recipe includes lean Venison, Game Meat, which generally is much easier on the stomach in terms of digestion. It also includes Kinder’s Cracked Pepper Lemon Seasoning which is an organic seasoning and much healthier than most seasonings in the store (if you think all seasonings are healthy, check your labels closely). Finally, Primal Palate’s Greek Dressing is used as the salad dressing and is Keto AND allergen-friendly.

Optavia and the Recipe Inspiration

On the Optavia plan or “On the 5-and-1 Program” as my coach says, you are allotted one, “Lean and Green” meal each day. In simple terms, this means while following the “Lean and Green” guide, you’re able to eat lean protein (i.e. chicken, game meat, seafood, fish, etc.) and vegetables. Both of these components are to be measured out and ta-da – you have your meal!

Today’s inspiration came from Optavia’s Cheeseburger Mason Jar Salad. Enjoy and remember you can always add your own flair onto a meal, even if you’re working towards a healthier life!

Venison Burger Salad Ingredients

Crafting the Lean Venison Burgers

  1. First, in a large mixing bowl (the larger the better), dump the 3 lbs. of Ground Venison and 2 lbs. of Ground Pork in.
  2. Next, add seasonings to your taste.
  3. Finally, add Worcestershire Sauce into the meat and seasoning mixture until the mixture is slightly moist but not drenched in liquid.

Pressing Burgers into a Burger Press

  1. First, using a Burger Press or your hands, form Venison Hamburger patties. Place these patties on a parchment-lined baking sheet or tray and refrigerate for 1-2 hours.
  2. Once the Venison Burger patties have marinated in the refrigerator, bring them to room temperature on the counter (this takes about 30 minutes).
Venison Hamburger Patties are formed and marinated in the refrigerator. Allow these patties to marinate for 1-2+ hours (the longer you marinate them, the tastier they will be).

Cooking the Burgers

  1. First, preheat a griddle or grill. Add 1 tbsp. of oil to prevent the patties from sticking.
  2. Next, place the patties onto the griddle or grill and cook until cooked to your liking (because Venison is super lean, it does not take long to cook. Thus, set aside about 15-20 minutes to cook each Venison burger patty).
  3. Finally, top each Venison patty with your favorite slice of cheese (we had Swiss Cheese on hand, so that’s what topped each patty today).

Serving the Burgers

  1. Once the Venison Burgers are cooked through and cheese has been added, take each patty off and set it on a serving tray.
  2. Finally, enjoy on a hamburger bun (if you’re not “On Program” or over a delicious bed of salad…keep reading for that)!

Assembling the Venison Burger Salad

The overall recipe is ideally, for a group of people. However, for this section, I’m slimming it down to a single serving.

  1. First, measure out 2 c. of Salad Spring Mix and place it onto a plate or bowl (whatever your preference is for serving).
  2. Then, slice 1/4 of the Yellow Bell Pepper into julienned slices, and then chop into bite-sized pieces. Add the Bell Pepper to the Spring Salad Mix.
  3. Next, slice 4-5 Cherry Tomatoes in quarters and add to the Spring Salad Mix.
  4. Then, thinly slice 1 Green Onion, English Cucumber, and Celery Rib and add to the Spring Salad Mix.
  5. Next, measure out 2 tbsp. of Salad Dressing and pour it on top of your greens (you can also dip your greens into the salad dressing – again, whatever your preference).
  6. Finally, place a cooked Venison Hamburger Patty on top of the salad and dive in! Enjoy!
