Fiesta Pinwheels are the perfect addition to any potluck gathering. Flour tortillas filled with your favorite taco flavors make these pinwheels the perfect bite!

The Inspiration
Our toddler attends a Spanish-Immersion PreSchool, and today the school is hosting an International Potluck Dinner for all students and their families. The school asked each attendant to bring a picnic blanket, lawn chairs, and a dish to share with all. As I was contemplating all the dishes I could make, I decided I wanted to be a bit more festive than just a casserole dish. Thus, the idea of pinwheels came about.

After researching the various pinwheel recipes I could make, I decided to give the Fiesta Pinwheel recipe a go. These seemed easy, delicious, and easy to pack and go and set up at the potluck dinner. Please note this recipe is easily adaptable to fit your own taste buds; have fun and be creative!
The Ingredients

- Cream Cheese
- Sour Cream
- Mild Picante Sauce
- Siete Taco Seasoning (depends on your taste preferences)
- Dash Garlic Powder
- Black Olives
- Green Chiles
- Shredded Cheddar Cheese
- Green Onions (depends on your taste preferences)
- Burrito-size Flour Tortillas
Making the Pinwheel Filling
- In a Kitchen-Aid Stand Mixer with a whisk or paddle attachment, cream together the cream cheese and sour cream.
- Then, add the Picante sauce, taco seasoning, garlic powder, and green onions. Mix to combine. Scrape down the sides of the bowl.
- Next, add the black olives, green chiles, and cheddar cheese. Again, mix until combined. Scrape down the sides of the bowl.
- Turn off your stand mixer, take the attachment off, and then move the bowl off to the side.


Building the Pinwheels
- Then, take your Burrito-sized tortillas out of the packaging (it is important to get the Burrito-size as this will hold more of the Fiesta Pinwheel filling).
- Next, take a 1/4 measuring cup and place it in the center of the tortilla.
- Then, spread the Fiesta Pinwheel mixture with an icing spatula, spatula, or knife and spread the mixture evenly across the tortilla. Repeat until all 8 tortillas have been filled with the mixture.
- Next, roll the tortillas tightly and place them into a casserole dish.
- Then, cover the dish with a lid or plastic wrap and refrigerate for at least 1 hour (or overnight).




Slice the Pinwheels
- Next, slice the Fiesta Pinwheels using a sharp knife into 6-7 sections.
- Finally, place the Fiesta Pinwheels on a platter and dive in! You can serve these Fiesta Pinwheels with your favorite Salsa for an added punch of flavor, too.
- Note: If you’re planning to store these for a long period of time, you can freeze them in an airtight bag for up to 1 month, thaw them in the refrigerator overnight, and then serve them the next day. If you’re wanting to store these for a short period of time (2-3 days), place them in an airtight bag and place them in the refrigerator. Serve cold.
