Sourdough Cheez-It Crackers

Crisp, cheesy Sourdough Cheddar Crackers made with Sourdough Starter. This is an amazing on-the-go snack for both adults and kids.

Who doesn’t love a good go-to travel snack? Cheez-Its, Goldfish, and crackers, in general, are one of our favorite road trip snacks because they’re easy to pack and eat.

What is Sourdough Starter Discard?

Sourdough Starter Discard, in short, is the portion of the starter that is removed from the active starter. This is what is removed from your starter before you feed it again to make it bubbly and ready for action! If you’re an avid sourdough starter grower, you probably are left with cups of discard each week. This is a fantastic recipe to use up some of that discard and make something your whole family will love.

The Ingredients

Making the Cheez-It Sourdough Cracker Dough

  1. First, preheat your oven to 375 degrees.
  2. Then, line two baking sheets with parchment paper.
  3. Next, in a bowl, combine the flour and butter. Using your hands, break the butter up until the mixture looks like sand. This is a great place to incorporate your child in – make sure they have clean hands prior to starting…then have them mix the flour and butter together. They will LOVE it!
  4. Then, pour in the Sourdough Starter Discard, and shredded Cheddar Cheese. Gently mix using your hands.
  5. If your dough is not forming a ball, add 1-2 tbsp. of milk or water (I used Oat Milk).
Mix the butter and flour with your hands until the mixture is of the consistency of gravel or sand. This is a GREAT step to incorporate your toddler or child.

Place the Sourdough Cheez-It Cracker dough on parchment paper. Then, cover it with another sheet of parchment paper.

Roll Out the Dough

  1. Next, tear off 2 sheets of parchment paper and place one on your counter. Place the cracker dough onto the first sheet of parchment paper, and then place the second sheet on top of the dough (almost making a cracker dough sandwich with the parchment paper).
  2. Use a rolling pin and roll the dough as thin as you can get it. Then, take off the top sheet of parchment paper and cut the dough into cracker-like shapes (you can use a pastry wheel or pizza cutter – either works).
  3. Lay each of the cracker squares onto the parchment-lined baking sheets.
Using a rolling pin, roll out the Sourdough Cheez-It Cracker dough until it’s as thin as you can get it.
Using a rolling pin, roll your Sourdough Cheez-It dough between two sheets of parchment paper until it’s as thin as you can get it.
Cut the Sourdough Cheez-It Cracker Dough using a pastry or pizza cutter into square/rectangular shapes.

Bake the Crackers

  1. Bake the cracker dough in the oven for 10-13 minutes. The crackers should be crisp with slightly browned edges.
  2. Then, sprinkle with salt immediately after they come out of the oven. Allow them to cool on the baking sheet or on a wire, cooling rack.
  3. Serve them immediately or allow them to cool completely. If you’re packing these for a road snack or saving them for a later date, place them in an air-tight container. You can save these for up to 2 days (if they make it that long).
  4. Want to switch it up? Add different cheeses and/or seasonings within the dough to switch up the taste of these Sourdough Cheez-It Crackers. Enjoy!
Place the Sourdough Cheez-It Cracker squares/rectangles on a baking sheet lined with parchment paper. Bake for 10-13 minutes in a 375-degree preheated oven.

Store the Crackers in an Airtight Container

  • 1 c. Organic, All Purpose Flour
  • 3/4-1 c. Sourdough Starter Discard
  • 1 1/2 c. Shredded Cheddar Cheese (the original recipe called for 3/4 c., but if you are a cheese-lover, I would recommend adding the amount I've listed here)
  • Salt for sprinkling
