What is Sourdough Discard?

Sourdough Discard refers to the portion of the Sourdough Starter removed and discarded during the feeding process, typically done to maintain the health and balance of the Starter. Instead of throwing it away, it can be repurposed to add flavor and depth to other recipes, such as this Sourdough Discard Beer Bread.

Creating the Sourdough Discard Beer Bread Dough

  1. First, in a Bosch Universal Mixer, combine all of the ingredients.
  2. Next, turn the mixer on to speed 2 until the dough comes together, and then increase it to speed 3-4.
  3. Then, once the dough pulls away from the side of the bowl, turn the mixer off.
  4. Finally, the Sourdough Discard Beer Bread dough is ready!

First, in a Bosch Universal Mixer, combine all of the ingredients.

Turn the Mixer to Speed 2-4 Until the Dough Forms

Next, turn the mixer on to speed 2 until the dough comes together, and then increase it to speed 3-4. Then, once the dough pulls away from the side of the bowl, turn the mixer off.

Fermenting the Sourdough Discard Beer Bread Dough

  1. Once the dough is ready, place it into a lightly oiled ceramic or glass bowl, and cover it with a tea towel.
  2. Next, allow the dough to ferment for about 1 hour.
    • Note: You are not necessarily looking for the dough to rise, as it probably won’t with using Sourdough Discard. However, giving the Sourdough Discard time to work with the gluten will slightly reduce the gluten content.
  3. Then, prepare a bread pan by lining it with parchment paper.
  4. Finally, place the fermented bread dough into the prepared loaf pan.

  1. First, preheat the oven to 375 degrees Fahrenheit.
  2. Next, lightly flour the top of the Sourdough Discard Beer Bread dough.
  3. Then, using a bread lame, cut slits in the top of the loaf (either one large slit down the center or a design).
  4. Next, once the oven is preheated, place the bread into the oven and bake it for 45-50 minutes.
  5. Then, lather 2 tbsp. of melted butter on the top of the bread.
  6. Finally, remove the baked loaf to a wire rack and cool to room temperature.

Then, lather 2 tbsp. of melted butter on the top of the bread. Finally, remove the baked loaf to a wire rack and cool to room temperature.

Once the bread has cooled to room temperature, slice it using a Serrated Knife. Serve it with whipped butter, barbeque, raw honey, or jam. Enjoy!

  • 1 1/4 c. Organic Whole Wheat Flour
  • 12 oz. Beer
  • 2 tsp. Baking Powder
  • 1 tsp. Pink Salt
  • 1/4 c. Raw Honey
  • 1/2 c. Sourdough Discard
  • 1/4 c. Melted Butter (plus more for after baking)
