- Panko Breadcrumbs (Gluten-Free)

- Create the Venison Picadillo or remove the container of leftovers from your refrigerator.
- Next, peel and chop the sweet potatoes into quarters.
- Then, place the sweet potatoes into a pot of cold water, and bring it to a boil over medium-high heat.
- Next, boil the sweet potatoes for about 15-20 minutes, or until fork tender. Drain and transfer them to a mixing bowl.
- Then, mash the sweet potatoes until a consistently smooth texture is achieved.
- Note: If you do not have a potato masher, you can also puree the sweet potatoes in a high-speed blender or food processor until smooth.
- Finally, mix in the cornstarch, Panko breadcrumbs, and seasoning, until the mixture represents a dough.

- Note: If needed, add a bit more of the potato dough to fully enclose the filling.
- Next, turn on the air fryer.
- Then, place them into the air fryer and cook for 12-15 minutes at 400 degrees Fahrenheit.
- Note: Make sure you fry in a single layer. Therefore, you may have to work in batches to fry these.
- Finally, place the “fried” Venison Papas Rellenas onto a wire rack or paper towel-lined plate.
