On the 1st day of the holiday cookies series, my true love gave me, Matcha White Chocolate Cookies! Green Matcha, White Chocolate Chips, and Sugar Cookie dough come together in a beautiful, holiday green treat.

Furthermore, Matcha White Chocolate Cookies are eggless, tender, and the perfect pairing to hot coffee, cocoa, or tea during the cold, winter days. Finally, these festive cookies make terrific holiday gifts for family and friends!

Allergen Friendly
Matcha White Chocolate Cookies are allergy-friendly, especially for those with an egg allergy. Instead of using an egg, I substituted it for Carbonated Water. Carbonated Water, in my opinion, is one of the BEST egg substitutes for baking.

Furthermore, this 1 ingredient replacement yields baked goods that will make you question how there isn’t an egg in the recipe. Finally, substitute 1/4-1/2 cup of plain, Carbonated Water for 1 egg and watch the magic happen!

In addition to the Carbonated Water, if you need a gluten-free cookie, you can substitute the flour for King Arthur’s 1:1 Gluten-Free Flour. Finally, this cookie is not only delicious and festive, but it is a cookie that everyone with an egg allergy can enjoy!

Matcha White Chocolate Cookie Ingredients
- King Arthur’s Organic, All-Purpose Flour (or 1:1 Gluten Free Flour)
- Baking Soda
- Pink Salt
- Matcha Powder
- Unsalted Butter
- Granulated Sugar
- Carbonated Water
- Mexican Vanilla
- White Chocolate Chips
- Granulated Sugar (Optional for Coating Cookie Dough)

Making the Matcha White Chocolate Cookie Dough
- First, in a Kitchen Aid Stand Mixer with a Paddle attachment, cream together the butter and sugar.
- Next, pour in the vanilla, salt, and baking powder and mix until incorporated.
- Then, add the carbonated water and mix until combined. (Note: the carbonated water takes the place of an egg).
- Next, add the Matcha powder and mix until combined. Scrape down the sides of the mixing bowl.
- Then, add the flour, one cup at a time, and mix until just combined. Scrape down the sides of the bowl and then remove from the stand mixer.
- Next, add the White Chocolate Chips and mix with a spatula until just combined. (Note: you can also mix it with the paddle attachment – but just do one or two mixes so you don’t overmix the flour).
- Finally, the dough is ready to place onto baking sheets!

Finally, the Cookie Batter is Ready to Bake!

Preparing the Cookies for Baking
- First, preheat the oven to 350 degrees Fahrenheit.
- Next, create a Cookie prep station by taking out a Nonstick Baking Sheet and placing the additional sugar in a small prep bowl.
- Then, using a small cookie scoop, scoop out Matcha White Chocolate Cookie dough and form it into a ball.
- Next, roll the cookie dough in the sugar.
- Then, place the cookie onto the Nonstick Baking Sheet.
- Next, lightly press down to flatten the top of the cookie.
- Finally, continue steps 4-6 until all the cookie dough is used (you may have to work in batches depending on how many baking sheets you have and/or how much room your oven has for baking).

Baking the Matcha White Chocolate Cookies
- First, place one cookie sheet in the preheated oven.
- Next, bake the cookies for 10-12 minutes or until slightly crisp around the edges.
- Then, remove the cookies from the oven and place them on the stove to cool for 5 minutes.
- Next, remove the cookies to a wire, cooling rack to cool to room temperature.
- Finally, finish baking all of the cookies and cooling them prior to serving and/or storing them.
Bake the Cookies for 10-12 Minutes
