Crafting the Honey Oat Sourdough Bread Dough

  1. First, in a Bosch Universal Mixer, combine all of the ingredients, except the oats.
  2. Next, turn to speed 2 until the dough begins to form, and then turn it to speed 3.
  3. Then, as the dough begins to pull away from the sides of the mixing bowl, turn the mixer off.
  4. Next, remove the dough, form it into a ball, and place it in a Banneton Bowl.
  5. Finally, cover the bowl with a tea towel, and let it rise for 1 hour.

Then, as the dough begins to pull away from the sides of the mixing bowl, turn the mixer off.

Let the Dough Rise

Next, remove the dough, form it into a ball, and place it in a Banneton Bowl. Finally, cover the bowl with a tea towel, and let it rise for 1 hour.

Stretching and Folding the Dough

  1. First, after an hour of the bread dough rising, turn the dough onto a lightly floured surface.
  2. Next, sprinkle the oats over the Honey Oat Sourdough Bread dough, and knead it into the dough.
  3. Then, stretch and fold the bread dough by pulling out each side, and folding it over (or across) the dough.
  4. Next, after stretching and folding the dough, form it into a ball.
  5. Finally, place the Honey Oat Sourdough Bread dough back into the Banneton Bowl, cover it with a tea towel, and allow it to rise until doubled in size.
    • Note: This typically takes 6-12 hours depending on the temperature of your kitchen.

First, after an hour of the bread dough rising, turn the dough onto a lightly floured surface. Next, sprinkle the oats over the Honey Oat Sourdough Bread dough, and knead it into the dough.

Let the Honey Oat Sourdough Dough Rise

Finally, place the Honey Oat Sourdough Bread dough back into the Banneton Bowl, cover it with a tea towel, and allow it to rise until doubled in size.

Preparing the Honey Oat Sourdough Bread Dough for Baking

  1. First, after the dough has doubled in size, punch it down, and then fold each of the sides into the center.
  2. Next, place the folded dough into a large loaf pan.
  3. Finally, cover the dough with a kitchen towel, and allow it to rise for an additional 2 hours.

Baking and Serving the Honey Oat Sourdough Bread

  1. First, preheat the oven to 375 degrees Fahrenheit.
  2. Next, using a Bread Lame, slash the top of the Honey Oat Sourdough Bread with 4 to 5 slits.
    • Note: This will help the bread cook evenly as it bakes, and create a more tender center.
  3. Then, bake the bread for 40-45 minutes.
    • Note: If the bread is browning too quickly in the oven before the inside is cooked, you can cover it loosely with aluminum foil.
  4. Next, remove the baked bread, and place it on a wire, cooling rack.
  5. Finally, let the bread cool completely prior to slicing. Serve the bread as Avocado Toast, toast with fresh Honey or Jam, or as sandwich bread. Enjoy!

Storing the Honey Oat Sourdough Bread

As with most Sourdough Bread, it is best to enjoy the bread fresh or for up to 3 days. However, if you want to store it for a longer period of time, slice the entire loaf of bread. Then, freeze individual slices in an airtight container or Ziploc bag. Finally, to warm the slices, simply pop them in the toaster, toast them to your desired doneness, and enjoy!

If you do not want to bake the Honey Oat Sourdough Bread in a large loaf pan, you can bake it in a Le Creuset Bread Pan or Dutch Oven. Then, follow these instructions –

  • First, preheat a Dutch Oven or Le Creuset Bread Pan and the oven to 500 degrees Fahrenheit.
  • Instead of having the bread dough rise in a large loaf pan, punch down the dough after the bulk rise, and then reform it into a ball.
  • Next, place it onto an oversized sheet of parchment paper.
  • Then, lightly dust the bread dough with flour.
  • Next, score the bread using a Bread Lame.
  • Then, reduce the oven temperature to 450 degrees. Remove the Dutch Oven or Bread Pan from the oven, and place the dough into the pan.
  • Next, bake the bread, covered, for 20 minutes. Then, bake it uncovered for 20 minutes.
  • Finally, allow the bread to cool completely before slicing. Enjoy!
