Bourbon Peach Cobbler

Bourbon Peach Cobbler is rich, sweet, and filled with warm spices. In addition, this dessert is the perfect transition between Summer and Fall with fresh, juicy, and sweet peaches and rich and smooth Bourbon. Finally, this cobbler is delicious served on its own, or you can top it with Bourbon Vanilla Ice Cream for a well-rounded, sweet treat!

Bourbon Peach Cobbler Ingredients

This dessert is the perfect transition between Summer and Fall with fresh, juicy, and sweet peaches and rich and smooth Bourbon.

Macerating the Peaches

  1. First, peel and dice the peaches.
  2. Next, in a large mixing bowl, add the peaches, Bourbon, sugar, cornstarch, Ginger, Nutmeg, and Cinnamon.
  3. Then, mix well to coat the peaches evenly.
  4. Finally, set the bowl aside; let the peaches macerate for at least 30 minutes.

Peel and Dice the Peaches

First, peel and dice the peaches.

Add the Bourbon, Sugar, Cornstarch, and Spices

Next, in a large mixing bowl, add the peaches, Bourbon, sugar, cornstarch, Ginger, Nutmeg, and Cinnamon.

Then, mix well to coat the peaches evenly. Finally, set the bowl aside; let the peaches macerate for at least 30 minutes.

Preparing the Cobbler Crust

  1. First, in a large mixing bowl, add the flour, sugar, baking powder, discard, and salt.
  2. Next, using a Dutch Whisk, stir the mixture to combine.
  3. Then, pour in the Oat Milk and mix until the dough comes together.
  4. Next, using a Grater or a wide Microplane, grate the cold butter into the mixture.
  5. Then, using your hands, incorporate the butter into the dry ingredients until it is crumbly.
  6. Finally, set the bowl in the refrigerator for at least 15 minutes.
    • Note: This will help the butter get cold again, which will in turn help the biscuit crust be flakier.

Add the Dry Ingredients

First, in a large mixing bowl, add the flour, sugar, baking powder, discard, and salt. Next, using a Dutch Whisk, stir the mixture to combine.

Then, pour in the Oat Milk and mix until the dough comes together.

Add the Butter and Mix Until Combined

Next, using a Grater or a wide Microplane, grate the cold butter into the mixture. Then, using your hands, incorporate the butter into the dry ingredients until it is crumbly. Finally, set the bowl in the refrigerator for at least 15 minutes.

Assembling, Baking, and Serving the Bourbon Peach Cobbler

  1. First, preheat the oven to 425 degrees Fahrenheit. Place a Cast Iron Skillet in the oven while it’s preheating.
  2. Next, once the oven and Cast Iron Skillet are preheated, remove the Cast Iron Skillet and set it on the stove.
  3. Then, melt the remaining butter in the skillet.
  4. Next, add the macerated Peach and Bourbon mixture.
  5. Then, drop spoonfuls of the cobbler crust onto the Bourbon and Peach mixture.
    • Note: It is okay if there are gaps between your crust dough, it will expand while it bakes.
  6. Next, bake the Bourbon Peach Cobbler for 25 to 30 minutes, or until the crust is golden brown and the fruit is bubbly.
    • Note: You may want to place a large baking sheet underneath the Cast Iron Skillet, in case any drips over while it’s baking in the oven.
  7. Then, remove the baked cobbler from the oven and allow it to cool slightly prior to serving.
  8. Finally, scoop the cobbler into bowls and serve plain or top it with your favorite ice cream, such as Bourbon Vanilla Ice Cream. Enjoy!

Once Cast Iron Skillet is Heated, Add the Butter

First, preheat the oven to 425 degrees Fahrenheit. Place a Cast Iron Skillet in the oven while it’s preheating. Next, once the oven and Cast Iron Skillet are preheated, remove the Cast Iron Skillet and set it on the stove. Then, melt the remaining butter in the skillet.

Next, Add the Macerated Bourbon Spiced Peaches

Next, add the macerated Peach and Bourbon mixture.

Then, drop spoonfuls of the cobbler crust onto the Bourbon and Peach mixture. Next, bake the Bourbon Peach Cobbler for 25 to 30 minutes, or until the crust is golden brown and the fruit is bubbly.

  • 1/8 tsp. Habanero Salt (Optional)
  • 1 1/2 c. King Arthur Organic, All-Purpose Flour
  • 2 tsp. Baking Powder
  • 1 tbsp. Sourdough Discard
  • 1/2 tsp. Pink Salt
  • 3/4 c. Unsalted Butter, Cold
  • 3/4 c. Oat Milk
  • 2 tbsp. Unsalted Butter (for preheated Cast Iron Skillet)
  • 1 Batch of Bourbon Vanilla Ice Cream (Optional for Serving)
