Blueberry Pop Tarts

Blueberry Pop Tarts are tender, flaky, and packed with fresh blueberry flavor. In addition, this recipe was adapted from Half Baked Harvest’s Giant Frosted Strawberry Pop Tarts.

Furthermore, Blueberry Pop Tarts are made using Sourdough Discard which balances the sweet and tart flavor of freshly picked blueberries. Finally, serve these Pop Tarts as is or glaze them with a lemon glaze to add an extra punch of flavor to these delicious breakfast pastries.

Blueberry Pop Tarts Ingredients

This recipe was adapted from Half Baked Harvest’s Giant Frosted Strawberry Pop-Tarts.

Crafting the Pop Tart Dough

  1. First, in a large, glass mixing bowl, combine the flour, Sourdough Discard, and salt.
  2. Next, using a grater or wide microplane, grate the butter into the flour mixture.
  3. Then, mix until the dough becomes clumpy.
  4. Next, add the water little by little until a ball of dough forms.
  5. Finally, let the dough chill in the refrigerator for 15 minutes prior to rolling it out to form the Pop-Tarts.

Combine the Ingredients

First, in a large, glass mixing bowl, combine the flour, Sourdough Discard, and salt.

Mix until the dough is crumbly (prior to adding the butter).

Grate the Butter

Next, using a grater or wide microplane, grate the butter into the flour mixture.

Mix with Hands Until the Dough Forms

Next, add the water little by little until a ball of dough forms. Finally, let the dough chill in the refrigerator for 15 minutes prior to rolling it out to form the Pop-Tarts.

Rolling Out and Assembling the Blueberry Pop Tarts

  1. First, place the Pop-Tart dough onto a lightly floured surface.
  2. Next, roll the dough into a large rectangle about 1/4-inch thick.
  3. Then, cut the dough into 8-10 rectangles.
  4. Next, evenly spread the Homemade Blueberry Filling, leaving about a 1-inch border on one side of the dough.
  5. Then, lay the “clean” dough rectangular pieces of Pop-Tart dough over the top of the filled dough.
  6. Next, use a fork to seal the edges by “crimping” them.
  7. Then, cover the baking sheet with a tea towel.
  8. Finally, place the unbaked, Blueberry Pop Tart in the refrigerator for 30 minutes.

Roll Out the Pop-Tart Dough

First, place the Pop-Tart dough onto a lightly floured surface.

“Square-Off” the Dough and Cut It Into 8-10 Rectangles

Next, roll the dough into a large rectangle about 1/4-inch thick.

“Square off” the dough by cutting the uneven sides off with a pizza cutter.

Then, cut the dough into 8-10 rectangles.

Spread the Blueberry Filling on One Side

Fill with 2 tbsp Filling
Next, evenly spread the Homemade Blueberry Filling, leaving about a 1-inch border on one side of the dough.

Lay the “Clean” Side of the Dough Over the Filled Side

Lay the Plain Side on Top of Filled Side
Then, lay the “clean” dough rectangular pieces of Pop-Tart dough over the top of the filled dough. Next, use a fork to seal the edges by “crimping” them. Then, cover the baking sheet with a tea towel.
Finally, place the unbaked, Blueberry Pop Tart in the refrigerator for 30 minutes.

“Frying” the Blueberry Pop Tarts

  1. After the unbaked Pop-Tart has been in the refrigerator for 30 minutes, take out the Ninja Air Fryer.
  2. Next, place one rectangular Pop-Tart into the Air Fryer basket.
  3. Then, turn the temperature to 380 degrees Fahrenheit and “fry” for 6 minutes.
  4. Next, flip the Blueberry Pop Tart over to the second side, and “fry” it for 5-6 minutes.
  5. Then, remove the Pop Tart and place it onto a wire, cooling rack to cool to room temperature prior to icing.
  6. Finally, cut the Pop Tart in half. Glaze the Blueberry Pop Tart with the Blueberry Glaze, dust it with decorative sprinkles, and enjoy!

Place the Blueberry Pop Tart Into the Air Fryer Basket

After the unbaked Pop-Tart has been in the refrigerator for 30 minutes, take out the Ninja Air Fryer. Next, place one rectangular Pop-Tart into the Air Fryer basket. Then, turn the temperature to 380 degrees Fahrenheit and “fry” for 6 minutes. Next, flip the Blueberry Pop Tart over to the second side, and “fry” it for 5-6 minutes.

Cut in Half, Cool Slightly, and Glaze

Then, remove the Pop Tart and place it onto a wire, cooling rack to cool to room temperature prior to icing. Finally, cut the Pop Tart in half.

To Serve

Once the Blueberry Pop-Tarts have cooled slightly, drizzle the Blueberry Glaze over the top. Then, toss the colorful sprinkles over the top of the pastry to give it an extra layer of flair and fun! Finally, use a sharp knife to cut the Blueberry Pop-Tarts into 8-10 rectangles. Serve immediately and enjoy!
